Crispy Smashed Beef Folded Quesadillas 🌮🧀
Description:
Get ready for a flavor explosion with these Crispy Smashed Beef Quesadillas! We are loading large flour tortillas with seasoned ground beef, crisp shredded lettuce, fresh pico de gallo, and a massive layer of melted cheese, then folding and grilling them until the shell is beautifully crunchy. It's the ultimate hybrid of a smash burger and a cheesy quesadilla!
Ingredients:
1 lb Ground Beef
4 Large Flour Tortillas
2 cups Shredded Cheddar & Monterey Jack Cheese
1 cup Shredded Lettuce
1/2 cup Pico de Gallo or Diced Tomatoes
1 tsp Taco Seasoning (or Cumin, Paprika, Garlic Powder mix)
Salt and Black Pepper, to taste
Sour cream or Guacamole, for dipping
Instructions:
Cook the Beef: In a skillet over medium-high heat, brown the ground beef with your taco seasoning, salt, and pepper until fully cooked. Drain excess grease and transfer to a bowl.
Assemble the Quesadilla: Lay a flour tortilla flat. On one half, sprinkle a handful of shredded cheese, followed by a generous spoonful of the seasoned beef, shredded lettuce, and pico de gallo. Top with another layer of cheese to act as the "glue."
Fold: Fold the empty half of the tortilla over the filling to create a half-moon shape.
Grill to Crispy: Heat a light coat of oil or butter in a skillet over medium heat. Place the folded quesadilla in the pan and cook for 3–4 minutes per side, pressing down with a spatula, until the tortilla is deeply golden and crispy, and the cheese inside is fully melted and stretching. Repeat for all tortillas and serve hot with sour cream!
