Crispy Sushi Tacos with Spicy Tuna 🍣🌮

Okay these crispy sushi tacos are about to become your new obsession. Crunchy panko-coated nori shells stuffed with creamy avocado, cucumber and the most insane spicy tuna mix using Elite Wild Tuna. I love this brand because they’re the only one that tests every single can for mercury, you get 40g of protein per can, and you can grab it at Sam’s Club 🤍

Ingredients:

For the tacos:

• 6-7 nori sheets
• 1 cup sushi rice (200g)
• 2 tbsp rice vinegar
• 1 tbsp sesame oil
• 1 tsp soy sauce
• 1/4 cup water (60ml / 2 fl oz)
• 1/4 cup cornstarch (60ml / 2 fl oz)
• 1/4 cup flour (60ml / 2 fl oz)
• Panko breadcrumbs
• Olive oil for frying

For the spicy tuna:

• 2 cans Elite Wild Tuna
• 1 red onion, chopped
• 2 tbsp mayo
• 2 tbsp sweet chili sauce
• 2 tbsp sriracha
• 1 tbsp soy sauce
• Juice of 1/2 lemon
• 1 tsp chili powder (optional)

To assemble:

• Cream cheese
• Cucumber, sliced
• Avocado, sliced
• Green onions, chopped
• Spicy mayo
• Teriyaki sauce
• Fried onions
• White sesame seeds

Instructions:

Step 1: Cook the sushi rice, then mix with rice vinegar, sesame oil and soy sauce. Let it cool.

Step 2: Cut nori sheets into circles using a small bowl as a guide.

Step 3: Spread 1 big tbsp of rice on each nori round.

Step 4: Mix water, cornstarch and flour into a paste. Brush the paste on top of the rice side, then dip into panko.

Step 5: Heat olive oil in a pan (just enough to cover the bottom) and fry the tacos for 1-2 minutes until golden and crispy.

Step 6: Mix the Safe Catch tuna with red onion, mayo, sweet chili, sriracha, soy sauce, lemon and chili powder.

Step 7: Fold the crispy nori into a taco shape and fill with cream cheese, cucumber, avocado and the spicy tuna mix.

Step 8: Top with green onions, spicy mayo, teriyaki sauce, fried onions and white sesame. Devour 🤤

3 Ingredients Potato Smash 🥔

ok this is genuinely the easiest snack ever and way better than chips. crispy cheesy potato bites in like 25 min total. 🫠

Ingredients (makes 10 bites)
• 5 small potatoes (halved = 10 pieces)
• 1 tbsp olive oil
• 1 cup shredded mozzarella
• salt + seasoning: paprika, chili, garlic powder

Instructions
1. halve 5 potatoes and boil 10-15 min until fork tender
2. drizzle 1 tbsp olive oil on a baking tray
3. sprinkle half the mozzarella in a thin layer
4. place potatoes cut-side up on the cheese and smash flat with a glass
5. season with salt and your favorite spices
6. top with the rest of the mozzarella
7. bake at 350F (180C) for 12 min until golden and crispy

If you want same sauce:
• 2 tbsp mayo
• 1 tbsp sriracha
• 1 tsp mustard
• 1 tsp paprika
• a splash of water to thin
• dried parsley on top
mix it all together. dip. thank me later 🤌

Japanese Egg Potato Salad

Creamy potatoes, crisp cucumber, smoky beef bacon, and a jammy egg on top that spills into the bowl.
🥔🥒🥚🥓
Ingredients

2 potatoes
4 soft-boiled eggs (1 for the top)
1/2 cucumber, thinly sliced
A few strips of beef bacon (or any kind)

Dressing
2 tbsp Greek yogurt
1 tbsp mayo
1 tbsp mustard
5 tbsp soy milk (or milk)
1 tsp black pepper & salt

Instructions
Step 1: boil the potatoes for 20 min and eggs for 10 min. (Remove one egg after 4-5min for the top)
Then transfer to ice water for 5 to 10 minutes. Shells slide right off.
Step 2: Crisp the bacon in a pan. Set it aside.
Step 5: Add and whisk the dressing in a bowl.
Step 6: Add the eggs, potatoes, cucumber and the beef bacon. Smash everything with a spoon. Top with the last jammy egg, crack it open, and serve.
