✅Ingredients:
2 cups grated zucchini
1/2 teaspoon salt
2 eggs
1/4 cup chopped onion
1/2 cup all-purpose flour
1/2 cup grated Parmesan cheese
1/2 teaspoon baking powder
1/4 teaspoon black pepper
Olive oil for frying

✅Directions:
Place the grated zucchini in a colander over the sink and sprinkle with salt. Let it sit for about 10 minutes, then squeeze out as much liquid as possible.
In a mixing bowl, beat the eggs. Stir in the grated zucchini, chopped onion, all-purpose flour, Parmesan cheese, baking powder, and black pepper until well combined.
Heat olive oil in a skillet over medium heat.

1 cup chopped pecans or walnuts
1 cup coconut flakes
