Ingredients:
- Dough:
- 2 ¾ cups all-purpose flour
- 3 tbsp sugar
- 1 tsp salt
- 1 packet active dry yeast
- ½ cup milk
- ¼ cup water
- 3 tbsp unsalted butter
- 1 egg
- Filling:
- 1 cup fresh raspberries
- 2 tbsp sugar
- 1 tbsp ground cinnamon
- Lemon Glaze:
- 1 cup powdered sugar
- 2 tbsp lemon juice
- 1 tsp lemon zest
Directions:
1. **Prepare the Dough:**
- In a large bowl, mix 1 cup flour, sugar, salt, and yeast. Set aside.
- Heat milk, water, and butter until warm. Add to flour mixture, then add the egg. Mix well.
- Add remaining flour, a little at a time, until dough is soft. Knead on a floured surface until smooth, about 5 minutes.
- Place dough in a greased bowl, cover, and let rise until doubled, about 1 hour.
2. **Prepare the Filling:**
- Gently toss raspberries with sugar and cinnamon in a bowl.
3. **Assemble the Rolls:**
- Roll dough into a 15x10 inch rectangle. Spread raspberry mixture evenly over dough.
- Roll up from the long side and cut into 12 rolls. Place in a greased baking dish. Cover and let rise for 30 minutes.
4. **Bake:**
- Preheat oven to 375°F (190°C). Bake rolls for 25-30 minutes, until golden brown. Let cool.
5. **Prepare the Glaze:**
- Mix powdered sugar, lemon juice, and lemon zest in a small bowl. Drizzle over warm rolls.
