Ingredients

Soup
6 strips thick cut bacon plus 2 tbsp. bacon drippings
1 lb. boneless skinless chicken breast or thighs
Salt/Pepper
1-2 teaspoons olive oil
2 tablespoons butter not needed if bacon drippings are used
1 small yellow onion diced
¾ cup carrots diced
2 ribs celery diced
3 cloves garlic minced
1 teaspoon hot sauce
1 teaspoon Worcestershire sauce
1/4 cup flour
5 cups chicken broth
1 cup half and half
1 ½ lbs. Yukon gold potatoes or red potatoes
1 ½ cups cheddar cheese shredded
1 pinch red pepper flakes optional
Green onions to garnish
Seasonings
1 teaspoon dried parsley
½ teaspoon rosemary
½ teaspoon oregano
½ teaspoon mustard powder
¼ teaspoon pepper
1 pinch red pepper flakes

Instructions

Note: This soup can be made without bacon if needed, but it really adds a lot of great flavor to the broth. 2 tablespoons of butter can be used instead of bacon drippings if needed.
Cook the Bacon: Cook the bacon in a 4.5-quart soup pot slowly over low heat. (I cut my bacon in half, it’s easier to fit it in the pan and have it cook evenly.) While the bacon cooks, measure out remaining ingredients. Once cooked, set aside on a paper towel lined plate. Chop once cooled and reserve 2 tablespoons of bacon drippings.
Wipe any dark spots from the pot but leave as much bacon remnants as you can, as that will add flavor to the soup.
Sear the Chicken: Season each side of the chicken with salt/pepper. Heat olive oil over medium-high heat and sear the chicken on each side until a golden crust develops, about 3 minutes per side. It’s okay if the middle is uncooked, it will finish cooking in the soup. Set aside and let it rest for 10 minutes, then cut into bite-sized pieces.
Make the Soup: Add the bacon drippings back to the pot over medium heat. Use a silicone spatula to “clean” the bottom and sides of the pot, this will add flavor to the soup. Add the onions, carrots, and celery and toss to coat. Soften for 5 minutes.
Add the garlic, hot sauce, Worcestershire sauce, and seasonings. Stir to combine.
Stir in the flour and cook for 2 minutes, until the raw flour smell is gone.
Add the chicken broth in small splashes, stirring continuously, and wiping the pan “clean” again as you do so. Add the half and half in the same manner.
Peel the potatoes and cut into bite-sized cubes. Add them to the soup. Bring to a boil, then reduce to a simmer. Add the chicken back along with any juice from the plate and simmer over medium heat, partially covered, until the potatoes are fork tender, about 20 minutes.
Reduce heat to low and sprinkle in the cheese, if adding. Stir in half of the chopped bacon and save the other half for the top of the serving bowls. Garnish with green onions and serve.

Nice tip~ 🍏🍎🍐🍊🍋🍑
If you eat fruit, don't throw seeds and kernels in the trash. Wash and dry them. Put them in a box and put it in the car. When you're on the road, throw them through the window in places where there are no trees. Nature itself will take care of them. Or throw it out during a walk or bike ride. This practice has been around for centuries in Asian countries. That is why their fruits are now growing everywhere. I would like to add that I have seen a similar phenomenon in Slovenia. While walking through the forest on the slope of the mountain around the city, I was surprised to find apple trees, apricots, plums and pears growing in the forest. Just pull and eat as much as you want.

Crockpot corn on the cob is always a hit in our house. You can add any seasonings you like. I added 1 cup of water to the bottom of the crockpot, cut a stick of butter into pieces, and sprinkled dried onion, salt, pepper, and parsley on top of the corn. Sometimes, I also add a bit of garlic and Lowry's salt. Cook it on high for 3 hours.
I know there are quicker ways to make corn on the cob—I'm 33 years old and not stupid! There are quicker ways to prepare many recipes, but using the crockpot saves space on the stove and makes the corn really juicy as it absorbs all the flavors of the seasonings.
I put tin foil under the corn to keep it from getting too hot and to ensure even cooking. I've also added baby potatoes and baby carrots under the corn with different seasonings, and it turned out amazing. Everyone loves it.
So, for those complaining that I'm spending too much time making my corn, maybe you have too much time on your hands! Thanks a bunch!

Tender Ribeye Roast with Cranberries and a Rich Balsamic Glaze
Ingredients:

3 to 5 pounds ribeye roast
1/2 cup balsamic vinegar
2 garlic cloves, minced
1/4 cup cranberry sauce
2 tablespoons brown sugar
1 teaspoon red pepper flakes
Salt, to taste
2 tablespoons olive oil
2 tablespoons vegetable oil
1/2 cup beef broth
2 cups fresh cranberries
6 sprigs thyme
Instructions:

Marinate the Roast:
In a large, resealable food storage bag, combine the balsamic vinegar, minced garlic, cranberry sauce, brown sugar, red pepper flakes, salt, and olive oil. Pierce the ribeye roast all over with a knife and place it in the bag. Seal the bag and massage the marinade into the roast. Refrigerate overnight, turning the bag occasionally for even marination.

Preheat the Oven:
Preheat your oven to 350°F (175°C).

Sear the Roast:
Remove the roast from the marinade and pat it dry with a paper towel to remove excess marinade. Heat the vegetable oil in a large cast-iron pan over medium heat. Once hot, place the beef in the pan and sear until it achieves a deep golden brown crust on all sides.

Prepare for Roasting:
Add the reserved marinade to the pan along with the beef broth, and mix to combine. Scatter the fresh cranberries and thyme sprigs around the roast in the pan.

Roast the Beef:
Transfer the pan to the preheated oven and roast for about 20 minutes per pound, or until a meat thermometer reads 140°F (60°C) for medium rare.

Rest and Serve:
Remove the roast from the oven and let it rest for 15 minutes before carving. Serve the roast beef with the cranberry balsamic pan sauce.

Prep Time: 15 minutes (plus overnight marination)
Cook Time: Varies with weight (20 minutes per pound)
Total Time: Approx. 1 hour 20 minutes for a 3-pound roast
Servings: 6-8 servings
