Meatball Pasta Soup🍲❤️
Ingredients:
- 1 pound ground beef or turkey
- 1 cup breadcrumbs
- 1 egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 8 cups beef broth
- 1 can diced tomatoes
- 2 cups pasta (e.g., macaroni or small shells)
- 1 cup frozen mixed vegetables
- Parmesan cheese for serving
- Fresh herbs for garnish (optional)
Directions:
1. In a large mixing bowl, combine the ground meat, breadcrumbs, egg, garlic powder, onion powder, salt, and pepper. Mix well and roll into small meatballs.
2. In a big pot, heat the beef broth and diced tomatoes until it comes to a boil.
3. Carefully add your meatballs to the bubbling broth and let them cook for about 10 minutes until fully cooked through.
4. Toss in the pasta and frozen mixed veggies, cooking everything until the pasta is nice and tender—about 8 to 10 minutes.
5. Ladle the soup into bowls and sprinkle with Parmesan cheese and fresh herbs if you're feeling fancy! Enjoy this comforting meal hot!
