These Garlic Butter Chicken Bites with Creamy Parmesan Pasta are the perfect weeknight dinner! 🍝🧄 Comfort food at its finest!
Ingredients:
Chicken Bites:
1 lb (450 g) boneless, skinless chicken breast, cut into bite-sized pieces
2 tablespoons olive oil
3 tablespoons unsalted butter
4 cloves garlic, minced
1 teaspoon paprika
1 teaspoon Italian seasoning
Salt and pepper to taste
Creamy Parmesan Pasta:
8 oz (225 g) pasta (fettuccine, penne, or your choice)
1 tablespoon olive oil
3 tablespoons unsalted butter
3 cloves garlic, minced
1 cup heavy cream
1 cup grated Parmesan cheese
1/2 cup chicken broth
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Directions:
Cook the Pasta:
Cook pasta according to package instructions. Drain and set aside.
Prepare Chicken Bites:
Heat olive oil and 2 tablespoons of butter in a large skillet over medium heat.
Season the chicken pieces with paprika, Italian seasoning, salt, and pepper. Add to the skillet.
Cook for 4-5 minutes per side or until golden and cooked through. Remove chicken from skillet and set aside.
Make the Garlic Butter Sauce:
In the same skillet, melt the remaining tablespoon of butter and sauté garlic until fragrant (about 1 minute).
Return the cooked chicken bites to the skillet, toss to coat in the garlic butter, and remove from heat.
Prepare Creamy Parmesan Sauce:
In a separate saucepan, heat olive oil and butter over medium heat. Add garlic and sauté until aromatic.
Stir in heavy cream, chicken broth, and Parmesan cheese. Cook for 3-4 minutes, stirring continuously until the cheese is melted and the sauce thickens.
Add the cooked pasta to the sauce, tossing to coat evenly.
Combine and Serve:
Plate the creamy Parmesan pasta and top with garlic butter chicken bites.
Garnish with chopped parsley and serve warm.
