I wasn't planning on baking this morning. Then I remembered a half-empty container of blueberries about to turn, and that's usually all the excuse I need.

Apparently, after a year of making sourdough, I just discovered something new that's really making a difference. Someone mentioned that stirring your starter again 30–45 minutes after initially mixing it helps strengthen the gluten and gives it an even bigger rise. I gave it a shot last night, and even though it’s chilly in my house, it rose a full 2 inches more than normal—it’s practically exploding out of my Weck jar!

I've been making sourdough long enough to know that the timeline is everything. Get that right, and the rest mostly takes care of itself. This is the schedule I keep coming back to, not because it's fancy, but because it fits into a real day without asking you to rearrange your life around your dough. Feed your starter in the morning. Mix at 3pm. A few stretch and folds through the afternoon. Shape before bed. Bake the next morning. That's genuinely it. No waking up at 3am wondering if you've missed your window. No complicated math. Just a rhythm that works. The recipe itself is about as stripped back as sourdough gets: active starter, water, flour, salt. Four ingredients, one Dutch oven, and a little patience. Everything else is just timing.

I can honestly say this might be the most amazing sourdough sandwich bread loaf I’ve made 🥰
Dare I say I might even prefer it over a classic round loaf? 😂
Here’s the recipe I followed:
300g starter
650g warm water
50g honey
40g avocado oil
20g salt
1000g bread flour
(This makes two loaves)
Mix everything into a shaggy dough, then let it rest for an hour. Do 4 sets of stretch and folds every 30 minutes. Cover and leave it out on the counter overnight.
The next day, gently press out as many bubbles as you can and shape the dough into a rectangle. Fold the long sides in, then roll it up tightly. Place into a loaf pan and cover for one hour.

I don’t bother with stretch and folds or refrigerating my dough. I give my starter a feeding in the morning and leave it on the counter all day. At night, I mix the bread dough and let it rest on the counter in a covered bowl overnight. The next morning, while the Dutch oven is preheating, I shape the dough, place it on parchment paper, and cover it with a bowl for an hour. Then I bake it at 400°F for 40 minutes covered and 3–4 minutes uncovered. (I preheat the Dutch oven in a 450°F oven, and once I place the dough inside, I lower the temperature to 400°F for baking.) It’s a really simple routine. Ever since I discovered this method, it completely transformed the way I bake sourdough. I also keep my starter in the fridge and only feed it once per week.

Here’s mine: a little sourdough confession...
I weigh and mix everything right in my KitchenAid bowl. Then I set a timer for 30 minutes, mix for 30–60 seconds using the dough hook, cover with a tea towel, and repeat every 20 minutes.
I do 4 rounds of mixing total, all with the mixer.
Then, I transfer the dough to a big restaurant-style Cambro container with a lid, and straight into the fridge it goes — for 24 to 48 hours.

Good morning, Did you know you can bake sourdough bread in a regular loaf pan using the same recipe as a rustic loaf? Simply shape your dough, place it seam-side down in the loaf pan, and cold-proof it overnight. In the morning, preheat your oven to 425°F, cut a slit down the middle of the dough, and cover it. Bake for 30 minutes with a lid on (foil or another loaf pan works as a lid). Then, remove the lid and bake for an additional 15 minutes. The result? A perfect sourdough loaf in a classic loaf shape!

I’ve been making ciabatta nonstop lately.
My base recipe is: 500g flour, 400g water, 100g starter, 8g salt. I mix, do a few stretch and folds, then move the dough into an oiled bowl. Let it ferment until it’s grown about 75%.
Then I gently dump it out, trying not to lose all that air. Cut into pieces and let them proof for about an hour.
When it’s time to bake, I slide a scraper under each piece and flip it onto the baking sheet. The top becomes the bottom and that’s what gives it that classic ciabatta look.

I’ve made the discard Cheez-Its three times now, and here’s what I’ve learned:
If you haven’t made them yet, you absolutely should. They’re delicious and a healthier option too.
They’re dangerously addictive—buy an extra block of cheese ahead of time.
You might think the dough is small and doesn’t need to be divided... do it anyway. It stretches way farther than expected.
Go with extra sharp cheddar—it makes a massive difference. Mild and sharp are fine, but only extra sharp gives that real Cheez-It flavor.
Don’t skip poking a hole in the center—it keeps them from puffing up.

Sourdough loaf bread!!!! Holy moly! Fresh blueberries, cream cheese chips and lemon with sugar- before I shaped it into a log, I added the fresh blueberries and the cream cheese chips- then I rolled it into a log and let it sit for 10 minutes and then I sealed it and put it in the pan- I didn’t add anything extra except for a little bit of vanilla and lemon extract when I was mixing the dough-
Recipe
⅓ cup (65 grams) active sourdough starter (fed within 12–24 hours)
1⅓ cups (300 grams) warm water, filtered (95° to 100°F)
¼ cup (56 grams) granulated sugar (can substitute with 2 rounded tablespoons of honey)
3½ – 4 cups (500 grams) bread flour or all-purpose flour
1½ tablespoons (20 grams) extra-virgin olive oil
2 teaspoons (9 grams) salt
Mix-ins:
1 cup fresh blueberries (pat them dry)
¾ cup cream cheese baking chips (or chopped cold cream cheese cubes)
1 tbsp flour (to toss the berries and chips)
For the Topping (optional):
1 tbsp butter, melted
1 tbsp sugar for dusting
Optional Topping:
1 tbsp melted butter
1 tbsp sugar (for dusting)
