Ingredients:
- 1 1/4 cups all-purpose flour
- 1/2 cup unsalted butter (cold and cubed)

- 3–5 tbsp ice water
- 1 cup granulated sugar
- 2 tbsp all-purpose flour

- 1/4 tsp salt
- 1 1/2 cups water
- 2 lemons (zested and juiced)
- 2 tbsp unsalted butter
- 4 egg yolks (lightly beaten)
- 4 egg whites
- 6 tbsp granulated sugar
- 1/4 tsp cream of tartar
- 1/2 tsp vanilla extract
Directions:
1. **Make the Crust:** In a mixing bowl, combine the flour and salt. Cut in the cold cubed butter until the mixture resembles coarse crumbs. Slowly add ice water, one tablespoon at a time, until the dough comes together. Chill the dough for about 30 minutes.
2. Once chilled, roll out the dough and lay it into a 9-inch pie pan. Trim and crimp the edges to your liking, and don't forget to prick the bottom of the crust with a fork! Bake it in a preheated oven at 375°F (190°C) for 15-18 minutes until it's lightly golden. Let it cool completely.
3. **Make the Filling:** In a saucepan over medium heat, whisk together the sugar, flour, cornstarch, and salt. Then stir in the water, lemon juice, and zest. Keep cooking until the mixture thickens, stirring continuously. Remove it from the heat, whisk in the butter, and then gradually mix in the beaten egg yolks. Return to heat and boil for 1-2 minutes.
4. Carefully pour the hot lemon filling into the cooled crust.
5. **Make the Meringue:** In a clean mixing bowl, beat the egg whites and cream of tartar until they’re foamy. Gradually add the sugar and vanilla, continuing to beat until you achieve those lovely stiff peaks.
6. Spread the meringue over the hot lemon filling, making sure to seal the edges well to avoid shrinkage. Bake at 350°F (175°C) for 12-15 minutes or until the meringue is golden and beautiful.
7. Let the pie cool at room temperature for about an hour and then refrigerate for at least 4 hours before slicing.
