Roasted Chickpeas with Creamy Baked Feta and Herbs 🧀🌿🍅

Ingredients:

1 can (15 oz) chickpeas, drained and rinsed
1 block (8 oz) feta cheese
2 tablespoons olive oil
1 teaspoon dried oregano
½ teaspoon smoked paprika
½ teaspoon red pepper flakes (optional)
1 cup cherry tomatoes, halved
2 cloves garlic, minced
1 tablespoon lemon juice
¼ cup fresh parsley, chopped
Salt and black pepper to taste

Directions:

Preheat the oven to 400°F (200°C).
In a baking dish, toss the chickpeas with olive oil, oregano, smoked paprika, red pepper flakes, salt, and black pepper.
Nestle the block of feta cheese in the center of the chickpeas. Scatter the cherry tomatoes and minced garlic around the dish.
Drizzle everything with a little extra olive oil and bake for 25 minutes until the feta is soft and slightly golden.
Remove from the oven, drizzle with lemon juice, and gently stir the mixture to create a creamy texture.

Pistachio Dream Cookie Bars 💚

Ingredients:

1 ½ cups crushed vanilla wafers
½ cup unsalted butter, melted
1 (3.4 oz) box instant pistachio pudding mix
1 cup whole milk
1 (8 oz) package cream cheese, softened
½ cup powdered sugar
1 (8 oz) container whipped topping, thawed
½ cup chopped pistachios
¼ cup white chocolate chips

Directions:

Preheat oven to 350°F (175°C). Lightly grease an 8x8-inch baking dish.
In a mixing bowl, combine crushed vanilla wafers and melted butter until the texture resembles wet sand. Press the mixture evenly into the bottom of the prepared baking dish.
Bake for 10 minutes, then remove from the oven and let cool completely.
In another bowl, whisk together the pistachio pudding mix and milk until thickened, about 2 minutes. Set aside.
In a separate bowl, beat cream cheese and powdered sugar until smooth. Fold in half of the whipped topping.
Spread the cream cheese mixture evenly over the cooled crust.

Ingredients:
20 jumbo pasta shells
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
1 (24 oz) jar marinara sauce
1 (15 oz) container ricotta cheese
1 cup shredded mozzarella cheese, divided
1/2 cup grated Parmesan cheese
1 large egg
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon chopped fresh basil (for garnish)

Directions:
Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
Cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside.
In a large skillet over medium heat, cook the ground beef and diced onion until browned. Drain excess grease.
Add minced garlic and sauté for 1 minute until fragrant. Stir in 1 cup of marinara sauce and simmer for 5 minutes. Remove from heat.
In a mixing bowl, combine ricotta cheese, ½ cup mozzarella cheese, Parmesan cheese, egg, Italian seasoning, salt, and black pepper. Mix well.

1 small onion, diced

1 (8 oz) package cream cheese, softened
1/2 cup sour cream
1/2 teaspoon Italian seasoning

Fresh parsley, chopped (for garnish)

Directions:

20 wonton wrappers
8 oz cream cheese, softened
1/4 cup powdered sugar
1/2 teaspoon vanilla extract

For the Topping:
1/4 cup granulated sugar

Directions:

In a bowl, mix the softened cream cheese, powdered sugar, vanilla extract, strawberry jam, and chopped strawberries until smooth.

1 lb button or cremini mushrooms, cleaned and stems trimmed
1 cup all-purpose flour
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
2 large eggs
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese (optional)
Vegetable oil for frying

For the Cool Ranch Dip:
1/2 cup mayonnaise
1/2 cup sour cream
1 tablespoon ranch seasoning mix
1 teaspoon lemon juice
1 teaspoon fresh dill, chopped (optional)

Directions:

Heat about 2 inches of vegetable oil in a deep pan to 350°F (175°C).
In a shallow bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, salt, and black pepper.
In a separate bowl, beat the eggs.

1 cup sour cream
1/2 cup unsalted butter, melted
1 box (8.5 oz) corn muffin mix
2 large eggs
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup shredded cheddar cheese (optional)
1/4 cup chopped green onions (optional)

Directions:

Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish.
In a large mixing bowl, combine whole kernel corn, creamed corn, sour cream, melted butter, and eggs.

1/2 cup raspberry jam
1/2 cup rolled oats
1/4 cup chopped almonds (optional)
2 tablespoons cold butter, cubed (for crumble topping)

Directions:

Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.

Directions:

For the Topping:
1 cup whipped topping
1/2 cup chopped pecans

Directions:

1 box yellow cake mix
3/4 cup vegetable oil
4 large eggs

1/2 cup brown sugar
2 teaspoons cinnamon
1/2 cup strawberry preserves

For the Strawberry Cream Icing:

2 cups powdered sugar
1/4 cup strawberry preserves
2 tablespoons heavy cream (adjust for desired consistency)
1 teaspoon vanilla extract

Directions:

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
In a large bowl, mix together the cake mix, vegetable oil, eggs, and sour cream until smooth.
In a separate small bowl, combine brown sugar and cinnamon.
