• ¾ cup (180ml) canned coconut milk
• 2 tbsp (30ml) pineapple juice

• 1 large egg
• 2 egg yolks
• ⅓ cup (65g) granulated sugar

Ground Beef Greek Rice Bowl

Ingredients:

1 pound ground beef
1 cup long-grain rice
2 cups beef broth
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon ground cumin
1/2 teaspoon paprika
Salt and pepper to taste
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 cup Kalamata olives, pitted and sliced
1/2 cup feta cheese, crumbled
Fresh parsley, chopped (for garnish)

Directions:

In a medium saucepan, combine the rice and beef broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes.

While the rice is cooking, heat olive oil in a large skillet over medium heat. Add the chopped onion and garlic, sautéing for 2-3 minutes until the onion is translucent.
