Greek Chicken Gyros with Cucumber Tzatziki

Ingredients:

For the chicken:

2 boneless, skinless chicken breasts
2 tablespoons olive oil
2 cloves garlic, minced
1 tablespoon dried oregano
1 teaspoon ground cumin
1 teaspoon ground paprika
1/2 teaspoon ground cinnamon
Zest and juice of 1 lemon
Salt and freshly ground black pepper to taste
For the cucumber tzatziki:

1/2 cup Greek yogurt
1/2 cucumber, grated and excess water squeezed out
1 tablespoon olive oil
1 tablespoon fresh dill, chopped
1 tablespoon lemon juice
1 small garlic clove, minced
Salt and pepper to taste
For serving:

4 pita bread or flatbreads
Fresh vegetables (tomato slices, red onion, lettuce, etc.)

Directions:

Prepare the chicken marinade: In a bowl, mix the olive oil, minced garlic, dried oregano, cumin, paprika, cinnamon, lemon zest, lemon juice, salt, and pepper. Place the chicken breasts in the bowl and coat them thoroughly with the marinade. Cover and refrigerate for at least 30 minutes (or overnight for more flavor).
Make the tzatziki sauce: In a separate bowl, combine the Greek yogurt, grated cucumber, olive oil, dill, lemon juice, minced garlic, salt, and pepper. Stir well until everything is evenly mixed. Adjust seasoning if needed. Refrigerate the tzatziki until ready to serve.
Cook the chicken: Heat a grill pan or outdoor grill over medium-high heat. Grill the marinated chicken breasts for about 5-6 minutes per side, or until fully cooked and the internal temperature reaches 165°F (75°C). Once cooked, remove the chicken from the grill and let it rest for a few minutes before slicing it into thin strips.
Assemble the gyros: Warm the pita or flatbreads in a dry skillet or oven for a minute or two. Place a portion of the sliced chicken in the center of each pita, then top with a generous amount of cucumber tzatziki sauce. Add fresh vegetables like tomato slices, red onion, and lettuce.
Serve: Fold the pita around the filling and enjoy your homemade Greek Chicken Gyros with Cucumber Tzatziki!

One-Pot Creamy Beef and Shells

Ingredients:

1 lb ground beef
1 medium onion, diced
2 cloves garlic, minced
2 cups beef broth
1 can (14.5 oz) diced tomatoes, drained
1 cup heavy cream
2 cups uncooked shell pasta (or any pasta of choice)
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
Salt and pepper, to taste
1/2 cup grated Parmesan cheese
Fresh parsley, chopped (for garnish)

Directions:

In a large pot or Dutch oven, heat a tablespoon of olive oil over medium heat. Add the ground beef, breaking it apart with a spoon. Cook until browned and fully cooked, about 5-7 minutes. Drain any excess fat.
Add the diced onion and minced garlic to the pot with the beef. Cook for another 2-3 minutes until the onion softens and becomes translucent.
Stir in the beef broth, diced tomatoes, oregano, basil, salt, and pepper. Bring the mixture to a simmer over medium heat.
Once simmering, add the uncooked shell pasta to the pot. Stir to combine, ensuring the pasta is submerged in the liquid. Cover the pot with a lid and cook for 10-12 minutes, or until the pasta is tender and most of the liquid has absorbed. Stir occasionally.
Lower the heat and stir in the heavy cream and Parmesan cheese. Continue cooking for an additional 2-3 minutes, allowing the sauce to thicken and become creamy.
Taste and adjust seasoning with more salt and pepper if needed.
Garnish with fresh chopped parsley and serve warm.

No Bake Oreo Dessert

Ingredients:

1 package (15 oz) Oreo cookies
1/2 cup unsalted butter (melted)
8 oz cream cheese (softened)
1 cup powdered sugar
1 tub (8 oz) whipped topping (like Cool Whip)
1/2 cup heavy cream
1 teaspoon vanilla extract
1/4 cup chocolate chips (optional, for topping)

Directions:

Start by crushing the Oreo cookies. You can do this by placing them in a zip-top bag and using a rolling pin, or by pulsing them in a food processor until they’re finely crushed.
In a medium bowl, combine the crushed Oreos with the melted butter. Stir until the mixture is well-coated.
Press the Oreo mixture into the bottom of a 9x9-inch baking dish to form a crust. Use the back of a spoon to press it down firmly. Place the dish in the refrigerator to chill while you make the filling.

Add the whipped topping, heavy cream, and vanilla extract to the cream cheese mixture. Mix until everything is smooth and creamy.
Spread the cream cheese mixture over the chilled Oreo crust, smoothing it out evenly with a spatula.
Optional: sprinkle chocolate chips over the top for an extra touch of sweetness and texture.
