Greek Chicken Gyros with Cucumber Tzatziki
Ingredients:
For the chicken:
2 boneless, skinless chicken breasts
2 tablespoons olive oil
2 cloves garlic, minced
1 tablespoon dried oregano
1 teaspoon ground cumin
1 teaspoon ground paprika
1/2 teaspoon ground cinnamon
Zest and juice of 1 lemon
Salt and freshly ground black pepper to taste
For the cucumber tzatziki:
1/2 cup Greek yogurt
1/2 cucumber, grated and excess water squeezed out
1 tablespoon olive oil
1 tablespoon fresh dill, chopped
1 tablespoon lemon juice
1 small garlic clove, minced
Salt and pepper to taste
For serving:
4 pita bread or flatbreads
Fresh vegetables (tomato slices, red onion, lettuce, etc.)
Directions:
Prepare the chicken marinade: In a bowl, mix the olive oil, minced garlic, dried oregano, cumin, paprika, cinnamon, lemon zest, lemon juice, salt, and pepper. Place the chicken breasts in the bowl and coat them thoroughly with the marinade. Cover and refrigerate for at least 30 minutes (or overnight for more flavor).
Make the tzatziki sauce: In a separate bowl, combine the Greek yogurt, grated cucumber, olive oil, dill, lemon juice, minced garlic, salt, and pepper. Stir well until everything is evenly mixed. Adjust seasoning if needed. Refrigerate the tzatziki until ready to serve.
Cook the chicken: Heat a grill pan or outdoor grill over medium-high heat. Grill the marinated chicken breasts for about 5-6 minutes per side, or until fully cooked and the internal temperature reaches 165°F (75°C). Once cooked, remove the chicken from the grill and let it rest for a few minutes before slicing it into thin strips.
Assemble the gyros: Warm the pita or flatbreads in a dry skillet or oven for a minute or two. Place a portion of the sliced chicken in the center of each pita, then top with a generous amount of cucumber tzatziki sauce. Add fresh vegetables like tomato slices, red onion, and lettuce.
