Ingredients:

For the Brownie Base:

3/4 cup unsalted butter, melted

1 cup granulated sugar

2 large eggs

1 tablespoon vanilla extract

1/3 cup unsweetened cocoa powder

1/2 cup all-purpose flour

1/4 teaspoon salt

For the Ganache Topping:

1/2 cup heavy cream

1 cup semi-sweet chocolate chips

For Decoration:

Rainbow candy-coated chocolate chips (or rainbow sprinkles)

Directions:

Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.

In a large bowl, whisk the melted butter and sugar together until smooth.

Add the eggs and vanilla extract; mix until combined.

Sift in the cocoa powder, flour, and salt. Stir until fully incorporated and smooth.

Pour the batter into the prepared baking pan and smooth out the top.

Bake for 18–22 minutes, or until a toothpick inserted in the center comes out with moist crumbs.

Allow the brownies to cool completely in the pan.

To make the ganache, heat the heavy cream in a small saucepan until just beginning to simmer. Remove from heat, then pour over chocolate chips in a heatproof bowl.

Let sit for 2 minutes, then stir until smooth and glossy.

Pour ganache over the cooled brownies and spread evenly.

Immediately sprinkle rainbow candy-coated chocolate chips over the top.

Chill in the fridge for 1 hour before slicing into squares.
