Zesty Lime Shrimp & Avocado Salad 🥑🦐
A cool, crisp, and flavor-packed salad bursting with juicy shrimp, creamy avocado, and bright lime,perfect for lunch, light dinner, or even taco night!
🛒 Ingredients (Serves 4)
1 lb cooked shrimp, peeled & deveined
2 ripe avocados, diced
1 cup cherry tomatoes, halved
¼ cup red onion, finely chopped
¼ cup fresh cilantro, chopped
Juice of 2 limes
Zest of 1 lime
1 tbsp olive oil
1 garlic clove, minced
Salt & cracked black pepper, to taste
Optional: 1 small jalapeño, finely diced
Lime wedges, for serving
👨🍳 Instructions
1️⃣ Prep the Shrimp
If using frozen shrimp, thaw and pat dry. Toss with olive oil, lime zest, salt, and pepper. Chill while prepping the rest to lock in flavor.
2️⃣ Mix the Veggies
In a large bowl, gently mix avocado, tomatoes, red onion, and cilantro. This vibrant combo gives the salad color, texture, and freshness.
3️⃣ Add the Zing
Pour in lime juice, add garlic, and season with salt and pepper. Toss gently—this is where all the citrusy magic happens!
4️⃣ Combine & Chill
