Baked Chicken Chimichangas 🌯🧀
These baked chicken chimichangas are crispy, cheesy, and packed with bold Tex-Mex flavors—without the mess of frying! Perfect for an easy weeknight dinner or a fun meal to share with friends.
Ingredients
🌯 Flour tortillas: 6 large
🍗 Shredded cooked chicken: 3 cups (rotisserie works great!)
🧀 Cheddar cheese: 1 cup, shredded
🧀 Monterey Jack cheese: 1 cup, shredded
🌶️ Green chilies: 1 can (4 oz), diced
🌽 Corn kernels: 1/2 cup (optional)
🌮 Taco seasoning: 1 tablespoon
🥫 Enchilada sauce: 1 cup
🧈 Butter: 2 tablespoons, melted
🌿 Fresh cilantro: For garnish
Method
1️⃣ Preheat the Oven:
🔥 Preheat your oven to 400°F. Line a baking sheet with parchment paper or lightly grease it with non-stick spray.
2️⃣ Prepare the Filling:
🍗 In a large bowl, combine shredded chicken, half of the cheddar and Monterey Jack cheese, green chilies, corn (if using), and taco seasoning. Mix until everything is evenly coated.
3️⃣ Assemble the Chimichangas:
🌯 Lay a tortilla flat on a clean surface. Spoon about 1/2 cup of the chicken mixture into the center. Fold in the sides, then roll tightly like a burrito. Place seam-side down on the baking sheet. Repeat with the remaining tortillas and filling.
4️⃣ Brush with Butter:
🧈 Brush the tops of the rolled chimichangas with melted butter to help them turn golden and crispy while baking.
5️⃣ Bake the Chimichangas:
🔥 Bake for 20 minutes, or until the chimichangas are golden brown and crisp.
6️⃣ Top with Cheese and Sauce:
🧀 Remove the chimichangas from the oven. Spoon enchilada sauce over the top, then sprinkle with the remaining cheese. Return to the oven for 5 more minutes, or until the cheese is melted and bubbly.
7️⃣ Garnish and Serve:
🌿 Garnish with fresh cilantro. Serve hot with sour cream, guacamole, or salsa on the side!
