For the Pasta:
200g pasta (penne, spaghetti, or fusilli)
2 tbsp olive oil
1 onion, finely chopped
2–3 cloves garlic, minced
1–2 fresh tomatoes, chopped (or 1/2 cup tomato puree)
1 tsp tomato paste
Salt and pepper to taste
1/2 tsp red chili flakes (optional)
For the Yogurt Sauce:
1/2 cup plain Greek yogurt
1 clove garlic, grated or minced
Pinch of salt
For the Spiced Butter Drizzle:
2 tbsp butter
1/2 tsp paprika
1/4 tsp chili powder or Aleppo pepper
Optional: dried mint or sumac for garnish

1. Cook the Pasta:
Boil pasta in salted water until al dente. Drain and set aside.
2. Make the Sauce:
In a skillet, heat olive oil. Sauté onion until soft. Add garlic, tomatoes, tomato paste, salt, pepper, and chili flakes. Cook until saucy—about 5–7 mins.
3. Combine:
Add drained pasta into the skillet. Toss well to coat in the tomato sauce.
4. Prepare Yogurt Sauce:
In a bowl, mix yogurt, garlic, and a pinch of salt.
5. Make Spiced Butter:
In a small pan, melt butter. Add paprika and chili powder. Stir for 30 seconds and remove from heat.
6. Assemble & Serve:
Plate the pasta, spoon over the yogurt sauce, and drizzle the spiced butter on top. Garnish with dried mint or sumac if desired.
