Ingredients:
2 medium sweet potatoes, peeled and diced
4 slices bacon, chopped
1 small onion, diced
2 cloves garlic, minced
4 cups chicken broth (or vegetable broth for a vegetarian option)
1/2 cup heavy cream (optional, for a creamy texture)
1 teaspoon ground ginger (optional for extra warmth)
1 teaspoon ground cumin (optional for depth of flavor)
Salt and pepper, to taste
8-10 fresh sage leaves
1 tablespoon olive oil (for frying sage)
Instructions:
Cook the bacon: In a large pot, cook the chopped bacon over medium heat until crispy, about 5-7 minutes. Remove the bacon from the pot and set aside. Keep the bacon fat in the pot for extra flavor.
Sauté the aromatics: Add the diced onion to the pot with the bacon fat and cook for 3-4 minutes, until softened. Add the minced garlic and cook for another minute, until fragrant.
Cook the sweet potatoes: Add the diced sweet potatoes to the pot and stir. Pour in the chicken broth and bring to a simmer. Cover and cook for 15-20 minutes, or until the sweet potatoes are soft and easily pierced with a fork.
Blend the soup: Use an immersion blender to blend the soup until smooth. Alternatively, carefully transfer the soup in batches to a blender and blend until smooth. For a chunkier texture, blend only half the soup.
Add cream and seasonings: Stir in the heavy cream (if using), ground ginger, ground cumin, and season with salt and pepper to taste. Let the soup simmer for another 5 minutes to let the flavors meld together.
Fry the sage: Heat olive oil in a small skillet over medium heat. Add the fresh sage leaves and fry for about 1-2 minutes until crispy. Remove the sage leaves from the skillet and place them on a paper towel to drain.
Serve: Ladle the soup into bowls, top with the crispy bacon and crispy sage leaves, and serve hot.
