Roasted Duck with Orange Glaze 🦆🍊

Ingredients:
- 1 whole duck (about 5 pounds)
- Salt and pepper to taste
- 2 oranges, juiced and zested
- 1/4 cup honey
- 1/4 cup soy sauce
- 2 tablespoons balsamic vinegar
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)
Instructions:
1. Preheat your oven to 375°F (190°C).
2. Rinse the duck inside and out, pat dry with paper towels. Season with salt and pepper generously.
3. Place the duck on a roasting rack in a roasting pan and prick the skin all over with a fork to allow the fat to render during cooking.
4. In a small saucepan, combine orange juice, orange zest, honey, soy sauce, vinegar, garlic, and ginger. Bring to a boil, reduce heat, and simmer for 5 minutes.
5. Brush the glaze over the duck, reserving some for basting.
6. Roast the duck in the preheated oven for about 1 hour and 30 minutes, basting every 30 minutes with the remaining glaze.
7. If a thicker glaze is desired, whisk cornstarch mixture into the glaze and simmer until thickened.
8. The duck is done when the internal temperature reaches 165°F (74°C) and the skin is golden and crispy.
9. Let the duck rest for 10 minutes before carving. Serve with additional orange glaze on the side.
