Strawberry Cheesecake
Ingredients:
For the Crust:
1 ½ cups digestive biscuits or graham cracker crumbs
½ cup unsalted butter, melted
¼ cup sugar
For the Cheesecake Filling:
16 oz cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
1 cup heavy cream, whipped
1 cup strawberry puree (fresh or frozen)
For the Topping:
Fresh strawberries, sliced
Whipped cream (for decoration)
Strawberry sauce (for drizzling)
Instructions:
Prepare the Crust: In a bowl, mix the biscuit crumbs, melted butter, and sugar until combined. Press into the bottom of a springform pan and chill for about 30 minutes.
Make the Filling: In a large bowl, beat the cream cheese and powdered sugar until smooth. Add vanilla extract and mix. Gently fold in the whipped cream and strawberry puree until combined.
Assemble: Pour the cheesecake filling onto the chilled crust and smooth the top. Refrigerate for at least 4 hours or until set.
Decorate: Before serving, top with fresh strawberries, whipped cream, and drizzle with strawberry sauce.
