🍴 Ingredients:
🥔 6 medium russet potatoes, peeled and diced
🧈 1/2 cup unsalted butter
🧄 1 clove garlic, minced
🧅 1 small onion, diced
🧀 1 1/2 cups shredded cheddar cheese
🧀 1/2 cup cream cheese, softened
🍶 4 cups chicken broth
🧂 1 tsp salt
🧂 1/2 tsp black pepper
🥓 1/2 cup cooked bacon, crumbled
🌱 1/4 cup green onions, sliced (for garnish)
🧂 Optional: Sour cream for topping
🍲 Directions:
1️⃣ Prep the Potatoes: Add the diced potatoes to the Crock Pot, then top with butter, garlic, onion, salt, and pepper.
2️⃣ Add the Broth: Pour the chicken broth over the potatoes and stir it all together. Cover and cook on low for 7-8 hours or high for 4-5 hours until the potatoes are tender.
3️⃣ Mash It Up: Once the potatoes are soft, use a potato masher to mash the soup to your desired consistency. For a chunkier texture, mash lightly. For a creamier texture, mash more.
4️⃣ Creamy Goodness: Stir in the cream cheese and shredded cheddar cheese until it’s all melted and creamy.
5️⃣ Add the Bacon: Stir in crumbled bacon, then cook for an additional 15-20 minutes on low until everything is nice and hot.
6️⃣ Serve & Enjoy: Ladle the soup into bowls and garnish with extra bacon, green onions, and a dollop of sour cream if you like.
