Peanut Butter Cookie Cake – Thick, Chewy & Party-Perfect
🧾 Ingredients
🍪 Peanut Butter Cookie Cake
1½ cups all-purpose flour
¾ cup granulated sugar
½ cup brown sugar
1 cup creamy peanut butter
½ cup butter, room temperature
2 eggs
2 tbsp heavy whipping cream or milk
¾ tsp baking soda
½ tsp baking powder
¼ tsp salt
1 tsp vanilla extract
½ cup Peanut Butter M&M’s or chopped Peanut Butter Cups
½ cup peanut butter chips
½ cup dry roasted peanuts, coarsely chopped
🧁 Creamy Peanut Butter Frosting
1–1½ cups powdered sugar (to taste)
8 tbsp butter, room temperature
¼ cup creamy peanut butter
1 tbsp heavy whipping cream
Pinch of salt
👩🍳 Directions to Create Magic
1️⃣ Preheat & Prep
Preheat oven to 350°F (175°C).
Line an 11-inch round cookie pan with parchment paper.
2️⃣ Cream the Base
In a stand mixer with paddle attachment, beat granulated sugar, brown sugar, butter, and peanut butter on medium speed 2–3 minutes, until smooth and creamy.
3️⃣ Add Wet Ingredients
With mixer on low, add vanilla extract, heavy cream, and one egg. Mix until incorporated.
Add the second egg and mix again until combined.
4️⃣ Add Dry Ingredients
In a separate bowl, whisk flour, baking soda, baking powder, and salt.
Gradually add to the wet mixture on low speed until no dry streaks remain.
5️⃣ Fold in the Good Stuff
Remove bowl from mixer.
Gently fold in Peanut Butter M&M’s (or cups), peanut butter chips, and chopped peanuts using a spatula.
6️⃣ Bake
Press dough evenly into the prepared pan.
Bake 16–20 minutes, until edges are lightly golden and center is just set.
7️⃣ Cool
Let cookie cool 45 minutes in the pan before frosting.
🧁 Peanut Butter Frosting
1️⃣ Beat powdered sugar, butter, peanut butter, heavy cream, and salt until light and fluffy, about 3 minutes.
2️⃣ Transfer frosting to a piping bag and decorate the cooled cookie as desired—around the edges, center, or for writing.
