Asian Sweet Ginger Shrimp Noodle Salad Recipe 🥢🍤
Ingredients
For the Salad 🥗:
200g (7 oz) rice noodles or thin vermicelli noodles 🍜
300g (10 oz) shrimp, peeled and deveined 🍤
1 cucumber, julienned 🥒
1 medium carrot, julienned 🥕
1 red bell pepper, thinly sliced 🌶️
2 cups shredded cabbage (red or green) 🥬
2 green onions, finely sliced 🌱
1/4 cup fresh cilantro leaves 🌿
1/4 cup fresh mint leaves 🌿
1 tablespoon sesame seeds (optional) ⚪
For the Sweet Ginger Dressing 🧄🌟:
3 tablespoons soy sauce 🍶
2 tablespoons honey or maple syrup 🍯
2 tablespoons rice vinegar 🍚
1 tablespoon sesame oil 🛢️
1 garlic clove, minced 🧄
1 tablespoon fresh ginger, grated 🫚
Juice of 1 lime 🍋
1 teaspoon chili flakes (optional, for heat) 🌶️
Instructions
1. Cook the Noodles 🍜:
Cook rice noodles according to package instructions. Rinse under cold water, drain, and set aside.
2. Prepare the Shrimp 🍤:
Heat a non-stick skillet over medium heat. Season shrimp lightly with salt and pepper.
Cook shrimp for 2–3 minutes per side until pink and fully cooked. Set aside to cool slightly.
3. Make the Dressing 🥢:
In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, lime juice, and chili flakes (if using). Adjust sweetness and acidity to your taste.
4. Assemble the Salad 🥗:
In a large mixing bowl, combine cooked noodles, cucumber, carrot, bell pepper, cabbage, green onions, cilantro, and mint. Toss gently to mix.
Add the cooked shrimp and pour the dressing over the salad. Toss everything to coat evenly.
5. Garnish and Serve ✨:
Sprinkle sesame seeds on top for a little crunch, if desired.
Serve immediately or chill for 30 minutes for the flavors to meld together.
