🥘 Cozy Winter Cabbage Skillet

Ingredients:

1 small green cabbage, thinly sliced
1 onion, slice
2 cloves garlic, minced
2 tbsp olive oil or butter
1 tsp smoked paprika
½ tsp black pepper
Salt to taste

Optional add-ins: sliced sausage, bacon bits, or chickpeas

Instructions:

Heat olive oil or butter in a large skillet over medium heat.
Add onion and cook until soft and lightly golden.
Stir in garlic and cook for 30 seconds until fragrant.
Add sliced cabbage, salt, pepper, and smoked paprika.
Toss well, cover, and cook for 10–15 minutes, stirring occasionally, until cabbage is tender and slightly caramelized.

Meet your new favorite lazy-healthy meal: 5-Minute Black Bean & Corn Stuffed Sweet Potato 🥔🌽
It’s sweet, savory, creamy, and has that “I actually cooked” feeling… even when you didn’t.

Ingredients (1 serving)
1 cooked sweet potato

cup black beans (drained + rinsed)

1–2 tbsp salsa or pico de gallo

Salt + pepper

Lime wedge (optional)

Toppings (pick your favorites)
Avocado/guac, Greek yogurt/sour cream, shredded cheese, cilantro, jalapeños, hot sauce.

How to make it (5 minutes)
Slice open the cooked sweet potato and fluff the inside with a fork.

Heat black beans + corn (60–90 seconds in the microwave or a quick pan warm-up).

Season with salt, pepper, cumin, and a squeeze of lime.

Spoon the mixture onto the sweet potato.
