Cozy up this fall with these savory stuffed acorn squash filled with sausage, spinach, and a delightful crunch of pecans! 🥬✨
Ingredients:
- 2 acorn squash
- 1 pound sausage (Italian or your choice)
- 2 cups fresh spinach
- 1 medium onion, diced
- 1 cup pecans, chopped
- 1 cup dried cranberries
- Salt and pepper to taste
- Olive oil
Directions:
1. Start by preheating your oven to 400°F (200°C) – trust me, the aroma will be heavenly!
2. Cut the acorn squash in half and scoop out those seeds. Brush the insides with a good drizzle of olive oil and sprinkle with salt and pepper. Place them cut side down on a baking sheet and roast for about 25-30 minutes until they’re tender and ready to embrace all those yummy flavors.
3. While the squash is roasting, grab a skillet and cook the sausage over medium heat until it’s beautifully browned. Add the diced onion and continue cooking until it turns translucent – this is where the magic begins!
