🍣 Pan-Seared Salmon & Scallops Over Creamy Pasta 🍝✨
Ingredients:
For the Seafood:
2 salmon fillets
8 large scallops (peeled and deveined)
2 tbsp olive oil
1 tbsp butter
Salt and pepper, to taste
1 lemon (sliced, for garnish)
For the Pasta:
250g fettuccine or spaghetti
1 tbsp olive oil
3 garlic cloves (minced)
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 tsp red chili flakes (optional)
Fresh parsley, chopped, for garnish
Instructions:
Prepare the Pasta:
Cook pasta according to package instructions until al dente. Drain and set aside, reserving some pasta water for later.
Cook the Seafood:
Season the salmon fillets and scallops with salt and pepper.
Heat olive oil in a skillet over medium-high heat. Sear the salmon fillets for 3-4 minutes on each side until golden and cooked through. Remove and set aside.
In the same skillet, melt butter and sear the scallops for 2-3 minutes per side until golden brown. Remove from heat.
Make the Creamy Sauce:
In the same skillet, sauté minced garlic in olive oil until fragrant.
Add heavy cream, Parmesan, and red chili flakes (if using). Simmer for 2-3 minutes until thickened. Adjust the sauce consistency with reserved pasta water.
Combine Pasta and Sauce:
Toss the cooked pasta in the creamy sauce until well coated. Plate the pasta and top with pan-seared salmon and scallops.
Serve:
Garnish with fresh parsley and lemon slices. Serve immediately with a side of crisp white wine or your favorite beverage.
