Triple Chocolate Mousse Cake

• 1 cup (125g) all-purpose flour
• 1/2 cup (50g) cocoa powder
• 3/4 cup (150g) sugar
• 1 teaspoon baking powder
• 1/2 teaspoon baking soda
• 2 large eggs
• 1/2 cup (120ml) vegetable oil
• 1/2 cup (120ml) warm milk
• 1/2 teaspoon vanilla extract
• 1/4 cup (60ml) hot water
• 200g dark chocolate
• 1 cup (240ml) heavy cream
• 2 tablespoons powdered sugar
• 200g milk chocolate
• 1 cup (240ml) whipped cream
• 200g white chocolate or light milk chocolate
• 1 teaspoon instant coffee (optional)
• 100g dark chocolate (for ganache)
• 1/2 cup (120ml) heavy cream (for ganache)

Preheat oven to 170°C (340°F) and grease a square pan. In a bowl, mix together the flour, cocoa powder, baking powder, baking soda, and sugar. In another bowl, whisk the eggs, vegetable oil, warm milk, vanilla extract, and hot water until well combined. Pour the wet ingredients into the dry and mix until smooth, then pour it into the pan and bake for 25-30 minutes. Once ready, let it cool completely. For the first mousse layer, melt the dark chocolate and allow it to cool. In a separate bowl, whip the heavy cream with powdered sugar until soft peaks form. Gently fold in the cooled melted dark chocolate. Spread this mixture evenly over the cooled cake and chill for 30 minutes. Moving on to the second mousse layer, melt the milk chocolate and let it cool slightly. Gently fold the melted milk chocolate into the whipped cream, then spread over the first mousse layer. Chill again for another 30 minutes. For the third mousse layer, melt the white chocolate (or use light milk chocolate) and mix in the optional instant coffee if desired. Allow it to cool slightly, then fold it into the whipped cream. Spread this layer over the second mousse layer and chill for at least 2 hours until firm. To make the ganache topping, heat the cream until warm and pour it over the dark chocolate. Let it sit for 1 minute, then stir until smooth. Allow it to cool slightly before pouring over the chilled mousse cake. Finally, top with chocolate shavings or any decorations of your choice for a touch of elegance!
