John Wayne Casserole 🥩🧀
🍽 Ingredients:
For the Meat Layer:
🥩 1 lb ground beef
🧅 1 medium onion, chopped
🫑 1 bell pepper, chopped
🍅 1 (10 oz) can diced tomatoes with green chilies (e.g., Rotel), drained
🌮 1 packet taco seasoning
For the Base:
🥐 1 (8 oz) can refrigerated biscuit dough
For the Creamy Topping:
🥣 1 cup sour cream
🥄 1 cup mayonnaise
🥗 1 packet ranch dressing mix
For the Cheese Layer:
🧀 1 cup shredded cheddar
🧀 1 cup shredded Monterey Jack
🌶 1 (4 oz) can sliced jalapeños (optional)
👨🍳 Directions:
1️⃣ Preheat Oven & Prep Dish:
Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch casserole dish.
2️⃣ Cook the Beef Filling:
In a large skillet over medium heat, brown the ground beef.
Add the chopped onion and bell pepper and sauté until soft, about 5 minutes.
Stir in the taco seasoning and drained tomatoes. Simmer for another 3–5 minutes, then remove from heat.
3️⃣ Prepare the Biscuit Base:
Press the biscuit dough evenly into the bottom of your prepared dish.
Bake for 5 minutes to give it a head start (it will puff slightly).
4️⃣ Assemble the Casserole:
Layer the cooked beef mixture over the partially baked biscuit crust.
5️⃣ Add the Creamy Layer:
In a bowl, mix together the sour cream, mayonnaise, and ranch mix until smooth.
Spread this mixture evenly over the beef.
6️⃣ Top with Cheese & Jalapeños:
Sprinkle both cheddar and Monterey Jack cheeses on top. Add jalapeños if you like some heat.
7️⃣ Bake:
Bake uncovered for 25–30 minutes, or until the cheese is melted and bubbly and the biscuit base is cooked through.
8️⃣ Cool & Serve:
Let it rest for 5 minutes before slicing. Serve warm and enjoy the Tex-Mex comfort!
