Orange Chicken
Ingredients:
For the Chicken:
2 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
2 eggs
1 ½ cups cornstarch
½ cup all-purpose flour
Salt and pepper, to taste
Vegetable oil, for frying
For the Orange Sauce:
1 cup orange juice (fresh or store-bought)
½ cup granulated sugar
⅓ cup white vinegar
2 tablespoons soy sauce
1 tablespoon orange zest
½ teaspoon garlic powder
½ teaspoon ground ginger
1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
Optional: 1 tablespoon rice wine or rice vinegar (omit for alcohol-free version)
Optional: Red pepper flakes (for a little heat)
Directions:
Prepare the Chicken Coating:
In one bowl, beat the eggs. In another bowl, mix the cornstarch, flour, salt, and pepper. Dip each chicken piece into the egg, then coat thoroughly in the dry mixture.
Fry the Chicken:
Heat vegetable oil (about 1½ inches deep) in a large skillet or deep pan to 350°F (175°C). Fry the coated chicken in batches for 4–5 minutes each, until golden brown and crispy. Drain on a paper towel-lined plate.
Make the Orange Sauce:
In a saucepan over medium heat, combine orange juice, sugar, vinegar, soy sauce, orange zest, garlic powder, and ginger. Stir and bring to a simmer. Add the cornstarch slurry and cook for 2–3 minutes, or until the sauce thickens to a glossy finish.
Combine and Toss:
Place the fried chicken in a large bowl. Pour the orange sauce over the top and toss gently until every piece is well coated.
Serve and Enjoy:
Serve hot over rice, noodles, or alongside stir-fried vegetables. Garnish with green onions or sesame seeds for a finishing touch.
