Ingredients:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/3 cup brown sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 cup buttermilk
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups fresh peaches, diced
Directions:
1. Start by preheating your oven to 350°F (175°C). Line a muffin tin with cute paper liners for easy serving.
2. In a large bowl, combine the flour, granulated sugar, brown sugar, baking powder, salt, and cinnamon. Give it a good whisk to mix it all together!
3. In another bowl, whisk together the buttermilk, melted butter, eggs, and vanilla until everything is blended nicely.
4. Pour the wet mixture into the dry ingredients. Stir gently until just combined—don’t overdo it!
5. Now, fold in those juicy diced peaches, making sure they’re evenly distributed throughout the batter.
6. Spoon the batter evenly into the muffin cups, filling them about 2/3 full.
7. Pop them in the oven and bake for 18-20 minutes. They'll be done when a toothpick inserted into the center comes out clean.
