Here’s a fresh, vibrant, restaurant-quality Honey Lime Chicken & Avocado Rice Stack — sweet, tangy, creamy, and super satisfying! 🥑🍗🍚✨
Perfect for meal prep or a beautiful plate presentation.
⭐ Honey Lime Chicken & Avocado Rice Stack
🍗 Ingredients (2–3 servings)
For the Chicken
2 chicken breasts, thinly sliced
2 tbsp olive oil
2 tbsp honey
Zest of 1 lime
Juice of 1 lime
2 cloves garlic, minced
1 tsp soy sauce
1/2 tsp paprika
1/2 tsp chili flakes (optional)
Salt & pepper
For the Avocado Layer
2 ripe avocados, diced
1 tbsp lime juice
1 tbsp chopped cilantro
Salt & pepper
For the Rice Layer
2 cups cooked jasmine or basmati rice
1 tbsp butter
1 tbsp chopped cilantro
Juice of 1/2 lime
Salt to taste
For Drizzle (optional but amazing)
1 tbsp honey
1 tsp lime juice
A pinch of chili flakes
🔥 Instructions
1. Prepare the Chicken
Mix olive oil, honey, lime zest, lime juice, garlic, soy sauce, paprika, chili flakes, salt & pepper.
Add chicken and marinate 15–30 minutes (or longer for more flavor).
Heat a skillet and cook chicken 4–6 minutes until caramelized and golden.
Slice into strips.
2. Prepare the Avocado Layer
Mix diced avocado with lime juice, cilantro, salt & pepper.
Keep it chunky, not mashed.
3. Prepare the Rice
Mix warm cooked rice with butter, cilantro, lime juice, and salt.
4. Assemble the Stack (the fun part!)
Use a food ring mold or any round container:
Bottom layer: Rice — press gently.
Middle layer: Avocado mix — smooth lightly.
Top layer: Honey-lime chicken pieces.
Press slightly, then lift the mold carefully to reveal a beautiful stacked tower.
5. Drizzle
Mix honey + lime + chili flakes and drizzle over the stack.
