Chocolate Cake with Silky Mousse ๐ซ๐

Ingredients:
For the Chocolate Cake:
All-Purpose Flour โ 1 3/4 cups ๐

Salt โ 1/2 tsp ๐ง
Granulated Sugar โ 1 1/2 cups ๐
Eggs โ 2 large ๐ฅ
Whole Milk โ 1 cup ๐ฅ
Vegetable Oil โ 1/2 cup ๐ข๏ธ
Vanilla Extract โ 2 tsp ๐ฎ
Boiling Water โ 1 cup (to make the batter thin and rich) ๐ง
For the Silky Chocolate Mousse:
Heavy Cream โ 2 cups ๐งด
Semi-Sweet Chocolate โ 8 oz (chopped) ๐ซ
Powdered Sugar โ 1/4 cup ๐ฌ
Vanilla Extract โ 1 tsp ๐ฎ
Gelatin โ 1 tsp (optional, to help mousse set) ๐
For Garnishing:
Chocolate Shavings โ 1/4 cup ๐ซ

Instructions:
1. Make the Chocolate Cake:
Preheat your oven to 350ยฐF (175ยฐC). Grease and flour two 9-inch round cake pans.
In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
In another bowl, combine the sugar, eggs, milk, oil, and vanilla extract. Beat until smooth.
Gradually add the dry ingredients to the wet ingredients and mix until combined.
Slowly pour in the boiling water and mix until the batter is smooth (it will be thin).
Divide the batter evenly between the prepared cake pans.
Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cakes to cool in the pans for 10 minutes, then transfer them to wire racks to cool completely.
2. Make the Silky Chocolate Mousse:
In a heatproof bowl, melt the chopped semi-sweet chocolate using a double boiler or microwave in 30-second intervals. Let it cool slightly.
In a separate bowl, beat the heavy cream and powdered sugar until soft peaks form.
In a small bowl, dissolve the gelatin in a tablespoon of warm water (if using), then add it to the melted chocolate. Stir well.
Gently fold the whipped cream into the melted chocolate mixture until smooth and well combined. The mousse should be airy and light.
Chill the mousse in the fridge for at least 30 minutes before using.
3. Assemble the Cake:
Once the cakes are completely cool, place one layer on a serving plate.
Spread a generous layer of the silky chocolate mousse over the first cake layer.
Place the second layer of cake on top and press gently.
Frost the top and sides of the cake with the remaining mousse, smoothing it out evenly.
4. Garnish & Serve:
Garnish the cake with chocolate shavings, fresh berries, and a dollop of whipped cream, if desired.
