1 large eggplant, sliced into 1/2 inch rounds

2 large zucchini, sliced into 1/2 inch rounds

1 ½ cups oats (blend into oat flour or use as is)
1 cup fresh or frozen blueberries
2 eggs
½ cup milk (any kind)
⅓ cup honey or maple syrup (optional for sweetness)

1 tsp baking powder

Ingredients:
2-3 racks of pork ribs (baby back or spare ribs)
Salt and black pepper
2 tablespoons paprika
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon cayenne pepper (optional for heat)
1 cup barbecue sauce (store-bought or homemade)
For the Mashed Potatoes:
4 large potatoes (russet or Yukon Gold)
4 tablespoons butter
1/2 cup milk or heavy cream
Salt and pepper to taste
Chopped fresh herbs (parsley or chives)
For the Green Beans:
Fresh green beans
Salt
Optional: olive oil or butter, garlic
Instructions:
Prepare the Ribs:
Remove the thin membrane from the back of the ribs.
Mix salt, pepper, paprika, garlic powder, onion powder, and cayenne.
Rub the spice mixture generously over the ribs.
Wrap the ribs in foil and refrigerate for at least 2 hours or overnight.
