Strawberry Crumble Chia Pudding
Ingredients:
- 1 cup almond milk (or any milk of choice)
- 1/4 cup chia seeds
- 2 tablespoons maple syrup (adjust to taste)
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, chopped
- 1/2 cup oats
- 1/4 cup almond flour
- 2 tablespoons coconut oil, melted
- 2 tablespoons brown sugar (or coconut sugar)
- A pinch of salt
Directions:
1. In a medium bowl, whisk together the almond milk, chia seeds, maple syrup, and vanilla extract. Let it sit for about 10 minutes to allow the chia seeds to absorb the liquid and thicken.
2. Meanwhile, preheat your oven to 350°F (175°C).
3. In another bowl, combine the oats, almond flour, melted coconut oil, brown sugar, and salt. Mix until crumbly.
4. Spread the crumble mixture evenly on a baking sheet and bake for 10-12 minutes, or until golden brown. Keep an eye on it to avoid burning.
5. Once the chia pudding has thickened, layer it in serving bowls or jars with the chopped strawberries and the baked crumble.
6. Serve immediately or chill in the refrigerator for a refreshing treat.
