🧀 Cheesy Mashed Potato Puffs - these are a game changer! 🧀

Ingredients:
4 cups mashed potatoes (preferably leftover)
1 ½ cups shredded cheddar cheese
½ cup grated Parmesan cheese
1/4 cup sour cream
2 large eggs, beaten
2 tablespoons butter, melted
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and pepper, to taste
Chopped parsley for garnish (optional)
Cooking spray or oil for greasing

Directions:

Preheat the Oven:
Preheat your oven to 375°F (190°C). Grease a mini muffin tin with cooking spray or oil to prevent sticking.

Prepare the Mashed Potatoes:
In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, sour cream, beaten eggs, melted butter, garlic powder, onion powder, salt, and pepper. Stir until everything is well combined.

Form the Puffs:
Spoon the mashed potato mixture into the mini muffin tin, filling each cup about three-quarters full. Gently press the tops to form a rounded shape.

Bake:

Baked Garlic Parmesan Potato Wedges
Ingredients
3-4 large russet potatoes sliced into wedges
4 tablespoons olive oil
2 teaspoons salt
2 teaspoons garlic powder
2 teaspoons Italian seasoning
½ cup shredded parmesan cheese
optional: fresh parsley (or cilantro) ranch or blue cheese dressing for dipping
Instructions
Preheat oven to 375. Lightly grease a large baking sheet and set aside.
Place potato wedges in a large bowl. Drizzle with olive oil and toss to coat. In a small bowl whisk together salt, garlic powder, and Italian seasoning. Sprinkle potato wedges with the shredded cheese, tossing to coat, then sprinkle with the seasoning mixture.
Place potato wedges on prepared baking sheet in a single layer with skin-sides-down. Bake for 25-35 minutes until potatoes are fork-tender and golden. Sprinkle with freshly chopped parsley and dressing for dipping.

Caprese Grilled Flank Steak Salad

Ingredients:
For the Steak:
1 ½ lbs flank steak
2 tbsp olive oil
2 cloves garlic (minced)
1 tbsp balsamic vinegar
1 tsp dried oregano
Salt and pepper, to taste
For the Caprese Salad:
2 cups cherry tomatoes (halved)
8 oz fresh mozzarella balls (bocconcini)
1 cup fresh basil leaves
2 tbsp olive oil
Salt and pepper, to taste
For the Balsamic Dressing:
¼ cup balsamic vinegar
2 tbsp olive oil
1 tsp Dijon mustard
1 tsp honey
Salt and pepper, to taste
Directions:
For the Steak:
In a small bowl, whisk together the olive oil, minced garlic, balsamic vinegar, oregano, salt, and pepper. Pour the marinade over the flank steak and let it marinate for at least 30 minutes (or up to 4 hours) in the refrigerator.
Preheat your grill to medium-high heat. Remove the steak from the marinade and grill for 5-6 minutes per side, or until it reaches your desired doneness (130-135°F for medium-rare).
Remove the steak from the grill and let it rest for 5 minutes. Slice the steak thinly against the grain.
For the Caprese Salad:
In a medium bowl, combine the halved cherry tomatoes, mozzarella balls, and fresh basil leaves.
Drizzle with olive oil and season with salt and pepper. Toss gently to combine.
For the Balsamic Dressing:

SAY (yummy) SO I CAN ADD YOUR NAME TO ACTIVE MEMBER LIST.♥️

Homemade buttermilk biscuits 😍 OMG, DON'T LOSE.

Ingredients:
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
¼ teaspoon baking soda
7 tablespoons unsalted butter, chilled in a freezer and cut into thin slices
¾ cup cold buttermilk
2 tablespoons buttermilk for brushing

Directions
Step 1 Preheat oven to 425 degrees F (220 degrees C).
Step 2 Line a baking sheet with a silicone baking mat or parchment paper.
Step 3 Whisk flour, baking powder, salt, and baking soda together in a large bowl.
Step 4 Cut butter into flour mixture with a pastry blender until the mixture resembles coarse crumbs, about 5 minutes.
Step 5 Make a well in the center of butter and flour mixture. Pour in 3/4 cup buttermilk; stir until just combined.
Step 6 Turn dough onto a floured work surface, pat together into a rectangle.
Step 7 Fold the rectangle in thirds. Turn dough a half turn, gather any crumbs, and flatten back into a rectangle. Repeat twice more, folding and pressing dough a total of three times.
Step 8 Roll dough on a floured surface to about 1/2 inch thick.
Step 9 Cut out 12 biscuits using a 2 1/2-inch round biscuit cutter.
Step 10 Transfer biscuits to the prepared baking sheet. Press an indent into the top of each biscuit with your thumb.
Step 11 Brush the tops of biscuits with 2 tablespoons buttermilk.
Step 12 Bake in the preheated oven until browned, about 15 minutes.

4 cups potatoes, diced

Instructions:

1 tablespoon olive oil
1 pound asparagus, ends trimmed, cut into 2-inch pieces
2 cups cherry tomatoes, halved
3 cloves garlic, minced
Salt and pepper to taste
1/4 cup chicken broth
1 tablespoon lemon juice
1/4 cup fresh basil, chopped
1/4 cup fresh parsley, chopped
1/4 cup grated Parmesan cheese, plus more for serving
1 package (20 ounces) refrigerated cheese ravioli
Directions:

Cook the ravioli according to the package instructions. Drain and set aside.

How to make Cheddar Cheese Quick Bread
Ingredients:
2 cups all-purpose flour
4 teaspoon baking powder
1 tablespoon sugar
1 1/2 teaspoon garlic powder
1/2 teaspoon salt
1 1/2 cups shredded cheddar
1 cup milk
1 large egg
2 tablespoon butter
Instructions:
Preheat oven to 350° Grease/spray a loaf pan.
In a large mixing bowl, whisk together flour, baking powder, sugar, garlic powder and salt. Stir in shredded cheese. Set aside.
In a separate bowl, whisk together milk, egg & butter.
Add liquid ingredients to bowl of dry ingredients. Stir until just combined. Do not over mix.
Spoon/pour into loaf pan.
Bake for 45-50 minutes. Top should be a golden brown.
Cool on wire rack. Remove loaf from pan, slice & serve.🥰🥰

Bacon, Avocado, and Egg Toast 🍞🥑🥓🍳
Ingredients:
4 slices of bread
2 ripe avocados
4 slices of bacon
4 eggs
Fresh cilantro, chopped
Salt and pepper to taste
Olive oil for frying
Instructions:
Cook the Bacon:

In a pan over medium heat, cook the bacon until crispy. Once done, place it on a paper towel to drain the excess fat. Set aside.
Prepare the Toast:

Toast the bread slices in a toaster or on a skillet until golden brown.
Prepare the Avocado:

While the bread is toasting, cut the ripe avocados in half, remove the pit, and scoop out the flesh. Mash it lightly with a fork and season with salt and pepper.
Fry the Eggs:

In the same pan you used for the bacon, add a little bit of olive oil and heat over medium-high. Crack the eggs into the pan, cooking until the whites are set but the yolks are still runny (or longer if you prefer firmer yolks).
Assemble the Toast:
