🧀 Cheesy Mashed Potato Puffs - these are a game changer! 🧀
Ingredients:
4 cups mashed potatoes (preferably leftover)
1 ½ cups shredded cheddar cheese
½ cup grated Parmesan cheese
1/4 cup sour cream
2 large eggs, beaten
2 tablespoons butter, melted
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and pepper, to taste
Chopped parsley for garnish (optional)
Cooking spray or oil for greasing
Directions:
Preheat the Oven:
Preheat your oven to 375°F (190°C). Grease a mini muffin tin with cooking spray or oil to prevent sticking.
Prepare the Mashed Potatoes:
In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, sour cream, beaten eggs, melted butter, garlic powder, onion powder, salt, and pepper. Stir until everything is well combined.
Form the Puffs:
Spoon the mashed potato mixture into the mini muffin tin, filling each cup about three-quarters full. Gently press the tops to form a rounded shape.
Bake:
Bake the potato puffs in the preheated oven for 20-25 minutes, or until the tops are golden brown and slightly crispy.
Serve:
Remove the puffs from the muffin tin and let them cool for a few minutes before serving. Garnish with chopped parsley for a fresh touch, if desired.
