🌮🥚 Mexican Breakfast Casserole Recipe
🧾 Ingredients
For the Casserole
8 large eggs
1 cup milk
1 cup cooked breakfast sausage or ground beef
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1 cup diced bell peppers
½ cup chopped onion
1 cup diced tomatoes
1 cup black beans (drained)
1 cup corn kernels
6 small flour tortillas (cut into strips)
1 tbsp olive oil
1 tsp chili powder
1 tsp cumin powder
½ tsp paprika
Salt and black pepper to taste
Optional Toppings
Fresh cilantro
Jalapeños
Sour cream
Salsa
Avocado slices
👨🍳 Instructions
Step 1: Prepare the Filling
Heat olive oil in a pan over medium heat.
Add onions and bell peppers, then sauté for 3–4 minutes until soft.
Add cooked sausage or beef, black beans, corn, tomatoes, chili powder, cumin, paprika, salt, and pepper. Mix well and cook for 2 minutes.
Step 2: Prepare Egg Mixture
In a large bowl, whisk together:
Eggs
Milk
A pinch of salt and pepper
Step 3: Assemble the Casserole
Grease a baking dish.
Layer half of the tortilla strips on the bottom.
Add half of the meat and veggie mixture.
Sprinkle half of both cheeses.
Repeat the layers again.
Pour the egg mixture evenly over everything.
Step 4: Bake
Bake in a preheated oven at 375°F (190°C) for 35–40 minutes or until the eggs are set and the top is golden and bubbly.
