If you're on a low-carb journey but still crave something sweet and spicy, these "Low-Carb Ginger Spice Cookies" are the answer! Soft, warm, and full of cozy ginger flavor—perfect with a cup of tea or coffee.
• 2 cups almond flour
• 1/4 cup coconut flour
• 1 tbsp ground ginger
• 1 tsp ground cinnamon
• 1/2 tsp ground cloves
• 1/2 tsp baking soda
• 1/4 tsp salt
• 1/2 cup unsalted butter, softened
• 1/2 cup erythritol or monk fruit sweetener
• 1 egg
• 1 tsp vanilla extract
• 1 tbsp molasses (optional, for flavor; minimal carbs per cookie)
Directions
Preheat oven to 175°C (350°F) and line a baking sheet with parchment paper.
In a bowl, whisk together almond flour, coconut flour, ginger, cinnamon, cloves, baking soda, and salt.
In another bowl, cream softened butter and sweetener until fluffy.
Beat in the egg, vanilla extract, and molasses if using.
Slowly mix the dry ingredients into the wet until a dough forms.
Scoop tablespoon-sized portions and roll into balls. Flatten slightly on the baking sheet.
Bake for 10–12 minutes or until edges are golden and centers are soft.
Let cool on the tray for 5 minutes, then transfer to a rack to cool completely.
