Moroccan Chicken Thighs🔥🍗

Ingredients:

- 6 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon turmeric
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground ginger
- 1/4 teaspoon cayenne pepper (optional)
- 1 tablespoon honey or maple syrup
- Juice of 1/2 lemon
- 1/2 cup chicken broth
- 1/4 cup chopped fresh cilantro or parsley (for garnish)

Directions:

1. Preheat oven to 400°F (200°C).
2. In a small bowl, mix together salt, black pepper, cumin, coriander, smoked paprika, cinnamon, turmeric, garlic powder, ginger, and cayenne pepper.
3. Pat the chicken thighs dry with paper towels, then rub them all over with olive oil and the spice mixture.
4. Heat a large oven-safe skillet over medium-high heat. Sear the chicken thighs, skin-side down, for 3-4 minutes until golden and crispy. Flip and sear the other side for 2 minutes.

- 2 cups grated zucchini (do not drain)
- 1/2 cup vegetable oil (or melted coconut oil)
- 3/4 cup granulated sugar
- 1/2 cup brown sugar
- 2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour (or gluten-free flour blend)
- 1/2 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon (optional)
- 1/2 cup dairy-free or regular chocolate chips

Directions:

1. Preheat oven to 350°F (175°C) and grease or line an 8x8-inch baking pan with parchment paper.
2. In a large mixing bowl, mix together the grated zucchini, vegetable oil, granulated sugar, brown sugar, and vanilla extract until combined.

Ingredients:

- 2 (3.4 oz) packages instant vanilla pudding mix
- 3 cups cold milk
- 1 (8 oz) container whipped topping (Cool Whip), thawed
- 1 box (14 oz) graham crackers
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
- 2 tablespoons corn syrup or honey
- 1 teaspoon vanilla extract

Directions:

1. In a large mixing bowl, whisk together the vanilla pudding mix and cold milk until smooth and thickened (about 2 minutes).
2. Gently fold in the whipped topping until fully combined.
3. In a 9x13-inch baking dish, arrange a single layer of graham crackers to cover the bottom.
4. Spread half of the pudding mixture evenly over the graham crackers.

- 2 salmon fillets (6 oz each)
- 1 cup cherry tomatoes, halved
- 1/2 cup zucchini, thinly sliced
- 1/4 cup red onion, thinly sliced
- 2 tablespoons kalamata olives, sliced
- 2 tablespoons capers, drained
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon smoked paprika
- Juice of 1/2 lemon
- Salt and black pepper to taste
- 2 parchment paper sheets (about 12x16 inches)
- Fresh parsley or basil for garnish

Directions:

1. Preheat oven to 400°F (200°C).
2. Cut two large pieces of parchment paper and fold each in half to create a crease. Open them flat on a baking sheet.
3. Place a salmon fillet on one side of each parchment sheet.

- 8 oz cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup buffalo sauce
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup crumbled blue cheese (optional)
- 1/4 cup chopped green onions (for garnish)
- 1 tablespoon olive oil

Directions:

1. Preheat oven to 375°F (190°C).
