Spicy BBQ Cheeseburger Tater Tot Cups
Ingredients:
For the Tater Tot Cups:
- 3 cups frozen tater tots
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 1/2 cup shredded cheddar cheese
For the Filling:
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 250g ground halal beef
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon cayenne pepper (optional for extra heat)
- Salt and pepper to taste
- 1/4 cup barbecue sauce (halal-certified)
- 1/4 cup shredded mozzarella cheese
For Garnish:
- 1/4 cup spicy mayo or sriracha-mayo sauce
- 2 tablespoons chopped fresh chives
- 2 tablespoons fresh coriander or parsley, chopped
Directions:
1. Preheat oven to 400°F (200°C). Lightly grease a 12-cup muffin pan.
2. Place 4–5 tater tots in each muffin cup. Bake for 10 minutes until softened. Remove from oven and, using a small cup or spoon, press the tots into the bottom and sides to form a cup shape. Sprinkle with garlic powder, paprika, salt, pepper, and shredded cheddar.
3. Return to oven and bake for an additional 15 minutes until golden and crispy.
4. Meanwhile, prepare the filling. In a skillet over medium heat, add olive oil and sauté onions until soft. Add garlic and cook for another minute.
5. Add the ground beef, cumin, chili powder, cayenne, salt, and pepper. Cook until browned and fully cooked through. Stir in barbecue sauce and cook for another 2–3 minutes. Turn off heat and mix in mozzarella cheese.
6. Spoon the spicy BBQ beef mixture into the crispy tater tot cups and bake for 5 more minutes until bubbly and slightly browned on top.
7. Remove from oven and let cool slightly. Drizzle with spicy mayo and garnish with chopped chives and herbs before serving.
