This delightful dessert, with its delicate layers of phyllo and smooth custard, will transport you straight to a Greek pastry shop! I've made it, and trust me, it's a must-try. Ingredients:
- 1 package phyllo pastry
- 1 cup unsalted butter, melted
- 1 cup fine semolina
- 4 cups milk
- 1 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- Zest of 1 lemon
- 1/2 cup sugar (for syrup)
- 1 cup water
- 1 teaspoon vanilla extract (for syrup)
Directions:
1. First things first, preheat that oven to 350°F (175°C) so it’s ready to work its magic.
2. In a medium saucepan, combine the milk, sugar, and fine semolina. Cook over medium heat, stirring continuously until the mixture thickens to a creamy consistency.
3. Once thickened, take it off the heat and let it cool just a bit. Then, stir in the eggs, lovely vanilla extract, and some zesty lemon peel for that extra pop!
4. Grab a large baking dish and brush it generously with melted butter. Layer half of your phyllo sheets, brushing each one with butter—it's all about that delicious crunch!
5. Spread your rich custard mixture evenly over those buttery phyllo layers.
6. Now, top it off with the remaining phyllo sheets, again brushing each with butter to keep everything scrumptious.
7. To let the steam escape while baking, score the top layers into squares or diamonds—this keeps your Galaktoboureko from getting soggy!
8. Pop it in the oven and bake for 45-50 minutes or until it's gloriously golden brown.
9. While that's baking, let’s whip up the syrup! In a saucepan, combine sugar, water, and vanilla extract, bringing it to a boil.
10. Lower the heat and let that tasty syrup simmer for about 10 minutes.
11. Once your Galaktoboureko is baked to perfection, pour that hot syrup over it immediately and watch it soak in!
12. Now, let it cool down a bit before serving. It's going to be tough, but waiting will be worth it!
