🍛🌿 Biryani 🌿🍛
Ingredients:
2 cups basmati rice, soaked 30 mins
1½ lbs chicken or mutton, bone-in
1 cup yogurt
1 large onion, sliced and fried till golden (birista)
2 tomatoes, chopped
2 tablespoons ginger-garlic paste
1 teaspoon turmeric
1 tablespoon biryani masala
½ teaspoon chili powder
¼ cup chopped coriander and mint
4 cups water
Salt, to taste
2 tablespoons oil or ghee
A few whole spices (bay leaf, cloves, cinnamon)
Directions:
Marinate: Mix meat with yogurt, ginger-garlic paste, turmeric, chili, biryani masala, and salt. Set aside for 1 hour.
Cook rice: Boil rice with salt and whole spices until 70% cooked. Drain.
Cook meat: In a heavy pot, heat oil/ghee. Sauté tomatoes and fried onions. Add marinated meat and cook until tender.
Layer: In the same pot, layer rice over the meat. Sprinkle herbs. Cover and steam on low for 20–25 minutes (dum).
Serve: Fluff gently and serve hot with raita or salad.
