Hi there, spice adventurer! 🍚 Ready to enjoy one of the most beloved rice dishes in the world? Let’s make a classic, aromatic Biryani that fills the kitchen with magic!

🍛🌿 Biryani 🌿🍛

Ingredients:

2 cups basmati rice, soaked 30 mins
1½ lbs chicken or mutton, bone-in
1 cup yogurt
1 large onion, sliced and fried till golden (birista)
2 tomatoes, chopped
2 tablespoons ginger-garlic paste
1 teaspoon turmeric
1 tablespoon biryani masala
½ teaspoon chili powder
¼ cup chopped coriander and mint
4 cups water
Salt, to taste
2 tablespoons oil or ghee
A few whole spices (bay leaf, cloves, cinnamon)

Directions:

Marinate: Mix meat with yogurt, ginger-garlic paste, turmeric, chili, biryani masala, and salt. Set aside for 1 hour.

Cook rice: Boil rice with salt and whole spices until 70% cooked. Drain.

Cook meat: In a heavy pot, heat oil/ghee. Sauté tomatoes and fried onions. Add marinated meat and cook until tender.

Layer: In the same pot, layer rice over the meat. Sprinkle herbs. Cover and steam on low for 20–25 minutes (dum).

Serve: Fluff gently and serve hot with raita or salad.

Ingredients:

1 lb prawns, cleaned and deveined
½ cup grated coconut (fresh or frozen)
2 green chilies, chopped
1 teaspoon mustard seeds
1 small onion, chopped
1 sprig curry leaves (optional)
Salt, to taste
1 tablespoon oil

Directions:

Grind coconut and green chilies into a coarse paste. Set aside.

Heat oil in a pan. Add mustard seeds, curry leaves, and chopped onion. Sauté until soft.

Add prawns and cook for 3–4 minutes until pink. Stir in the coconut-chili paste and salt.

Cook on low for 2–3 minutes until fragrant and coated.

1 lb boneless chicken breast, diced

1 cup uncooked rice
1 can black beans, rinsed
1 cup corn (frozen or canned)
1 cup salsa
1½ cups chicken broth
1 teaspoon cumin
1 teaspoon chili powder
Salt, to taste
Shredded cheese, for topping (optional)

Directions:

In a deep skillet or pot, heat oil. Sauté chicken until lightly browned.

Add rice, beans, corn, salsa, broth, cumin, chili powder, and salt. Stir well.

½ teaspoon garam masala
Salt, to taste
1 tablespoon butter or oil (for basting)

Directions:

Mix yogurt, cashew paste, ginger-garlic paste, lemon juice, white pepper, garam masala, and salt into a marinade.

Coat the chicken well. Cover and refrigerate for 4–6 hours.

Grill or bake at 400°F (200°C) for 25–30 minutes, basting with butter or oil halfway through.

🥩🍅 Italian Pot Roast 🍅🥩

Ingredients:

3 lbs beef chuck roast
1 onion, chopped
3 garlic cloves, minced
1 can crushed tomatoes (14 oz)
1 tablespoon tomato paste
1 teaspoon dried oregano
1 teaspoon dried basil
1 bay leaf
Salt and pepper, to taste
1 cup beef broth
2 tablespoons olive oil

Directions:

Season roast with salt and pepper. Sear in olive oil until browned on all sides. Remove and set aside.

In the same pot, sauté onion and garlic. Stir in tomato paste, crushed tomatoes, herbs, and broth.

Return roast to the pot. Add bay leaf, cover, and simmer on low for 3 hours until fork-tender (or cook in oven at 325°F).

Remove bay leaf and serve sliced with sauce over mashed potatoes or pasta.

1 lb chicken gizzards, cleaned and halved
1 tablespoon oil
2 garlic cloves, minced
1-inch piece ginger, sliced
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 tablespoon rice vinegar
½ teaspoon five spice powder
1 star anise
1 cup water

Directions:

Blanch gizzards in boiling water for 5 minutes. Drain and rinse.

In a pot, heat oil and sauté garlic and ginger. Add gizzards and cook for 5 minutes.

Add soy sauce, oyster sauce, vinegar, five spice, star anise, and water.

Cover and simmer on low heat for 45–60 minutes until tender. Remove star anise before serving.
