+ to baked a gluten-free cheesecake for father’s birthday. This recipe came from my mom who received it from a good friend. I only changed the crust. Instead of a typical graham cracker crust I chose gluten free granola that I pulverized with melted butter and par baked. The topping? Candied orange peel and glazed mandarins and blueberries.

If any of you out there have not had King Cake, I am truly sorry. This cake, which is traditionally served and shared around Mardi Gras is like a Cinnabon dressed to the hilt as a cake. After many failed attempts I finally managed a weave on this half sheet ratatouille slab pie. It’s one of my favorite dishes by Kristen farmer hall:) I struggled so much to do the weave and am super proud of this accomplishment. I made this when I got home from a wake for a childhood friend. I’d like to think she was helping me🥰

This recipe was inspired by spinach and squash gratin. Love being able to dig into the bowl😂

NOTES: use a block of fresh Parmesan for grating on the smallest holes of a box grater or use a zester. This will help the cheese melt evenly and be incorporated into the mixture fully. Pre grated cheese contains additives that could cause clumping.

I was truly surprised that my reel making caramelized cream would be so popular, and apparent very polarizing 😂.

Caramelized cream is nuttier and has a richer flavor than caramelized butter. Once done, caramelized cream takes on a paste like texture that can be melted on to mixed nuts, popcorn, or anything that you may put butter on.

You can also use it in baked goods like pancakes by cutting the caramelized cream into the flour much like you would go with butter when making shortbread.

I usually freeze the bananas that start turning brown a mushy to use them for muffins, bread, or pancakes. But, I when I found that had so much in my freezer and there is just so much banana bread we could eat I searched for other recipes. Banana pudding? No - unfortunately for consistency and taste you need to use fresh and slightly under riped bananas.

I was thrilled to find this for banana pudding ice cream from not only was I surprised at the consistency (so much like store bought!) but it is a no churn ice cream. 🥰 I adapted the recipe a bit from hers and will definitely be trying this with other flavors. Give a … er….churn and see for yourself.

1 pint (2 cups) frozen bananas
1 11oz can sweetened condensed milk
Pinch of kosher salt
1 tsp vanilla extract
1 tub (9oz) whipped topping
1/2 pkg of Biscoff cookies, crushed

Let bananas thaw, then put them in a colander to drain excess liquid.

In a blender, blend bananas, salt, condensed milk, & vanilla extract.

Pour into a large container. Fold in half of the whipped topping. Fold in the cookies, then the rest of the whipped topping.

I kept this mixture in a bowl, but you can pour it into a smaller bowl or pie dish before covering it and freezing it at least 8 hrs or overnight.
