🍋🍰 Easy Glazed Lemon Cake 🍰🍋
Ingredients:
For the Cake:
1 box yellow cake mix
1 small box instant lemon pudding mix (about 3.4 oz)
¾ cup vegetable oil
¾ cup water
4 large eggs, beaten
For the Lemon Glaze:
2 cups powdered sugar
2 tablespoons melted butter
2–3 tablespoons lemon juice (fresh is best!)
Directions:
Preheat the oven: Set your oven to 350°F (175°C). Grease and flour a bundt pan or a 9x13-inch baking dish.
Mix the batter: In a large bowl, combine the yellow cake mix, lemon pudding mix, oil, water, and beaten eggs. Mix with an electric mixer on medium speed for about 2–3 minutes, or until smooth and well blended.
Bake the cake: Pour the batter into your prepared pan. Bake for 40–45 minutes (for a bundt) or 30–35 minutes (for a 9x13 pan), or until a toothpick inserted in the center comes out clean.
Cool slightly: Let the cake cool in the pan for 10–15 minutes, then invert onto a wire rack or platter.
Make the glaze: While the cake is cooling, whisk together powdered sugar, melted butter, and lemon juice in a bowl. Add just enough lemon juice to make a smooth, pourable glaze.
Glaze the cake: While the cake is still slightly warm, drizzle the glaze over the top so it soaks in a bit. Let it set before slicing.
Serving Tip: Garnish with fresh lemon zest or thin lemon slices for a pretty finish!
