🍪 Buttery Raspberry Crumble Cookies Recipe 🍇
📝 Ingredients
For the cookie dough:
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
For the filling and crumble:
- 1/2 cup raspberry jam
- 1/2 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, melted
👨🍳 Instructions
1️⃣ Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2️⃣ In a bowl, cream together butter, granulated sugar, and brown sugar until fluffy.
3️⃣ Add egg and vanilla extract, mixing until combined.
4️⃣ In another bowl, whisk flour, baking powder, and salt. Gradually mix into the wet ingredients until a soft dough forms.
5️⃣ Roll the dough into small balls and place them on the baking sheet.
