Taco Bell Chicken Quesadilla (Copycat)
Melty three-cheese blend, tender seasoned chicken, and that creamy jalapeño sauce—all folded into a golden, crispy tortilla.
Tastes just like the drive-thru... but fresher, hotter, and cheaper!
Ingredients:
- Creamy Jalapeño Sauce:
- 1/4 cup mayonnaise
- 2 tsp minced pickled jalapeños
- 1 cup cooked, shredded chicken
- 1/2 cup three-cheese blend (cheddar, Monterey Jack, mozzarella)
- 1 large flour tortilla
- 1 tbsp butter, melted
Instructions:
1. Prepare the Creamy Jalapeño Sauce: In a small bowl, combine the mayonnaise and minced pickled jalapeños. Mix well and set aside.
2. Assemble the Quesadilla: Lay the flour tortilla flat on a clean surface. Spread the creamy jalapeño sauce evenly over the tortilla.
3. Add Chicken and Cheese: Sprinkle the shredded chicken evenly over one half of the sauced tortilla. Top with the three-cheese blend.
4. Fold and Cook: Fold the tortilla in half, covering the chicken and cheese. Brush the outside of the folded tortilla with melted butter.
5. Cook the Quesadilla: Heat a large skillet or griddle over medium heat. Place the quesadilla in the skillet and cook for 2-3 minutes per side, or until golden brown and the cheese is melted and gooey.
6. Serve: Remove the quesadilla from the skillet and let it cool slightly. Cut into wedges and serve immediately.
