๐ฒ Creamy Italian Sausage & Spinach Soup with Pasta ๐ง๐ฟ๐ง
A rich, hearty soup loaded with tender sausage, pasta, spinach, and sun-dried tomatoes in a velvety garlic-parmesan broth. It's cozy, comforting, and bursting with Italian flavor!
Ingredients:
- ๐ญ 250g ground chicken or turkey sausage (or plant-based sausage)
- ๐ง 2 cloves garlic, minced

1 small onion, diced
- ๐
1/3 cup sun-dried tomatoes, chopped
- ๐ 1 cup ditalini or small pasta
- ๐ฅฌ 2 cups fresh spinach
- ๐ฅฃ 4 cups chicken or vegetable broth
- ๐ฅ 1 cup heavy cream (or 3/4 cup kefir + 1/4 cup water)
- ๐ง Salt & pepper to taste
- ๐ฟ 1/2 tsp dried Italian seasoning
- ๐ง 1/4 cup grated Parmesan cheese (plus extra for topping)
- ๐งด 1 tbsp olive oil
- ๐ Toasted bread, for serving (optional)
Directions:
- In a large pot, heat olive oil and sautรฉ onion and garlic until soft.
- Add sausage and cook until browned. Stir in sun-dried tomatoes and Italian seasoning.
- Pour in broth and bring to a boil. Add pasta and cook until al dente.
- Lower heat, add spinach and stir in cream (or kefir mixture). Simmer for 5 more minutes.
- Stir in Parmesan cheese. Adjust seasoning with salt and pepper.
- Serve hot with extra Parmesan and toasted bread if desired.
