INGREDIENTS:

- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1/2 cup Baileys Irish Cream
- 1 tsp vanilla extract
- 1 1/2 cups graham cracker crumbs
- 1 cup chocolate chips
- 2 tbsp unsweetened cocoa powder
- 1/4 cup crushed nuts (optional for coating)

DIRECTIONS:

1. In a large mixing bowl, combine the softened cream cheese and powdered sugar until smooth and creamy.
2. Pour in the Baileys Irish Cream and vanilla extract, then mix until fully incorporated.
3. Gradually add the graham cracker crumbs to the mixture, stirring until well combined.
4. Once mixed, cover the bowl with plastic wrap and refrigerate for about 30 minutes to help the mixture firm up.
5. After chilling, use a small cookie scoop or your hands to form small balls (about 1 inch in diameter) from the mixture.
6. In a microwave-safe bowl, melt the chocolate chips on medium power in 30-second intervals, stirring until fully melted and smooth.

- 1 cup corn (fresh or frozen)
- 1 cup chicken broth
- 1 cup sour cream
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 cup shredded Monterey Jack cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh cilantro, for garnish (optional)

Directions:
1. Preheat your oven to 350°F (175°C).
2. In a large skillet, heat the olive oil over medium heat.

- 1 package (16 oz) of gnocchi
- 2 tablespoons of olive oil
- 3 cloves of garlic, minced
- 4 cups of fresh spinach
- 1 cup of heavy cream
- 1 cup of crumbled feta cheese
- 1 teaspoon of dried oregano
- Salt and pepper to taste
- Grated Parmesan cheese for serving (optional)

Directions:

1. Start by bringing a large pot of salted water to a boil. Once boiling, add the gnocchi and cook according to package instructions until they float to the surface, usually about 2-3 minutes.
2. While the gnocchi cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.

- 4 large potatoes, peeled and diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons creole seasoning
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup corn, frozen or fresh
- 1 green onion, chopped (for garnish)
- ½ cup shredded cheese (optional)

Directions:

1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and sauté for about 5 minutes, or until softened.
3. Stir in the minced garlic and sauté for another minute until fragrant.
4. Add the diced potatoes and vegetable broth to the pot. Bring to a boil.
