Hobo Casserole: Rustic Ground Beef and Potato Bake 🥔🥘

Ingredients:

1½ lb (680 g) ground beef

1 medium onion, finely chopped

2 cloves garlic, minced

5–6 medium potatoes (Yukon Gold or Russet), thinly sliced

1 can (10.5 oz/298 g) cream of mushroom soup

1/2 cup sour cream

1/2 cup milk

1½ cups shredded cheddar cheese

1 tsp paprika

Salt and black pepper, to taste

1 tbsp olive oil or butter (for greasing)

Chopped parsley or green onion, for garnish (optional)

Directions:

Preheat the oven:
Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with a little oil or butter.

Cook the beef:
In a large skillet over medium heat, cook the ground beef until browned, about 6–8 minutes. Add onion and garlic and sauté for 2–3 more minutes until softened. Season with salt, pepper, and paprika. Remove from heat and set aside.

Mix the sauce:
In a bowl, whisk together the cream of mushroom soup, sour cream, and milk until smooth. Add a pinch of salt and pepper to taste.

Layer the casserole:
Spread a layer of sliced potatoes on the bottom of the dish. Spoon over some of the beef mixture, followed by a few tablespoons of the creamy sauce. Repeat layers until everything is used up, finishing with the sauce on top.

Bake covered:
Cover the casserole tightly with foil and bake for 45 minutes. Then remove the foil, sprinkle the shredded cheddar cheese over the top, and bake uncovered for another 15–20 minutes, or until the potatoes are fork-tender and the top is golden and bubbly.

Rest and serve:
Let the casserole rest for 10 minutes before serving. Garnish with fresh parsley or green onions if desired.

INGREDIENTS
1 pound ground beef
6 cups chopped cabbage, cut into 1-inch pieces
1 medium onion,
1 (15-ounce) can crushed tomatoes
1 (10-ounce) can Rotel tomatoes and green chiles
1 1/3 cups water
2 beef bouillon cubes, crumbled
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper
INSTRUCTIONS
Brown ground beef in a large nonstick skillet, breaking it apart with a wooden spoon.
Place cabbage and onion in a 6-quart slow cooker. Add the cooked ground beef.
Add remaining ingredients.
Cover and cook on LOW for 6 to 8 hours or on HIGH for 4 to 5 hours

Ingredients:
1 pound ground beef (or turkey/chicken for variation)
2 cans of beans (pinto, black, kidney, or white beans, your choice!)
2 tablespoons olive oil
1 cup chopped bell peppers (vary colors for a vibrant presentation)
1/2 cup chopped onions (diced finely for those who prefer milder taste)
2 jalapeno peppers, finely chopped (adjust amount based on desired heat level)
2 cans (28 ounces each) crushed tomatoes
2 tablespoons chili powder
1 tablespoon cumin powder
1 tablespoon fresh cilantro, chopped
Hot sauce, to taste
Salt and pepper, to taste
Step by Step:
In a large Dutch oven or saucepan, heat olive oil over medium-high heat. Add the ground beef and cook until it’s no longer pink. If using turkey or chicken, ensure it’s fully cooked through as well. Drain any excess grease from the pot.
Stir in the chopped bell peppers, onions, and jalapenos. Cook the vegetables on low heat until they soften and become tender, releasing their enticing aromas.

Ingredients:

1 kg pork chops
2 tablespoons olive oil
1 large onion, chopped
2 cloves garlic, chopped
2 carrots, sliced
2 potatoes, in buckets
1 red pepper, in strips
1 can crushed tomatoes (400 g)
1 cup meat broth
1 bay leaf
Salt and pepper to taste
Fresh chopped parsley for garnish
Instructions:

Heat olive oil in a large pot over medium-high heat. Add pork chops and stir them all over. Remove ribs and set aside.
In the same pot, add onion and garlic, and sauté until golden brown.
Add carrots, potatoes and red pepper, and cook for a few minutes, stirring occasionally.
Stir in the crushed tomato, beef stock and bay leaf. Mix well.
Return the ribs to the pot, making sure they remain submerged in the sauce.
Reduce the heat to low, cover the pot and cook for 1 1/2 hours or until the meat is tender and falls easily off the bone.
Adjust the seasoning with salt and pepper to taste.

1 teaspoon Italian seasoning

12 ounces linguine pasta

4 tablespoons unsalted butter

4 cloves garlic, minced

2 tablespoons all-purpose flour

2 cups heavy cream (or whole milk for lighter version)

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1/4 teaspoon garlic powder (optional for extra garlic flavor)

Fresh parsley, chopped (for garnish)

Directions:

1. Season the chicken with salt, pepper, and Italian seasoning. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 6–8 minutes until golden and cooked through. Remove from skillet and set aside.

2. In the same skillet, reduce heat to medium. Melt the butter and stir in the minced garlic. Cook for 1 minute until fragrant.

3. Sprinkle in the flour and whisk continuously for 1 minute to create a roux.

French Onion Beef Short Rib Soup 🥣
I went out to buy some really good beef short ribs.
We like veg this meaty French onion soup - so a unanimous decision, this is our supper tonight!
It's like food for the soul.
Serving with love and lots of garlicy, cheesy bread!

Ingredients:
- 2 tablespoons olive oil
- 500gr beef short ribs
- 4 large onions, thinly sliced
- 4 cloves garlic, minced
- 6 cups beef broth, I prefer chicken broth.
- 1 tablespoon balsamic vinegar
- 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
- 1 bay leaf
- Salt and pepper to taste
- 4 slices of French bread - or more!
- 1 cup shredded Swiss or Gruyère cheese

Instructions:
1. In a large pot, heat olive oil over medium heat.
2. Season the beef short ribs with salt and pepper, then sear them in the pot until browned on all sides, about 4-5 minutes each side. Remove the ribs and set aside.
3. In the same pot, add the sliced onions. Cook, stirring occasionally, until they caramelize and turn golden brown, about 15-20 minutes.
4. Add the minced garlic and cook for another 1-2 minutes until fragrant.
5. Return the beef short ribs to the pot and pour in the beef broth. Add balsamic vinegar, thyme, bay leaf, and more salt and pepper if desired.
6. Bring the soup to a boil, then reduce the heat to low. Cover and let it simmer for about 1.5 to 2 hours, until the meat is tender.
7. Preheat your oven grill. While the soup is simmering, place the French bread slices on a baking sheet and toast them lightly in the oven.
8. Once the ribs are tender, remove them from the pot, shred the meat, and discard the bones. Return the meat back to the soup and stir.

1.5 lbs chicken breasts, thinly sliced

1 green bell pepper, thinly sliced

1 onion, thinly sliced

1 cup mushrooms, sliced

2 cups shredded provolone cheese
