Hobo Casserole: Rustic Ground Beef and Potato Bake 🥔🥘
Ingredients:
1½ lb (680 g) ground beef
1 medium onion, finely chopped
2 cloves garlic, minced
5–6 medium potatoes (Yukon Gold or Russet), thinly sliced
1 can (10.5 oz/298 g) cream of mushroom soup
1/2 cup sour cream
1/2 cup milk
1½ cups shredded cheddar cheese
1 tsp paprika
Salt and black pepper, to taste
1 tbsp olive oil or butter (for greasing)
Chopped parsley or green onion, for garnish (optional)
Directions:
Preheat the oven:
Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with a little oil or butter.
Cook the beef:
In a large skillet over medium heat, cook the ground beef until browned, about 6–8 minutes. Add onion and garlic and sauté for 2–3 more minutes until softened. Season with salt, pepper, and paprika. Remove from heat and set aside.
Mix the sauce:
In a bowl, whisk together the cream of mushroom soup, sour cream, and milk until smooth. Add a pinch of salt and pepper to taste.
Layer the casserole:
Spread a layer of sliced potatoes on the bottom of the dish. Spoon over some of the beef mixture, followed by a few tablespoons of the creamy sauce. Repeat layers until everything is used up, finishing with the sauce on top.
Bake covered:
Cover the casserole tightly with foil and bake for 45 minutes. Then remove the foil, sprinkle the shredded cheddar cheese over the top, and bake uncovered for another 15–20 minutes, or until the potatoes are fork-tender and the top is golden and bubbly.
Rest and serve:
Let the casserole rest for 10 minutes before serving. Garnish with fresh parsley or green onions if desired.
