Chicken Bacon Ranch Baked Ziti
Serves 8
Ingredients:
β’ 1 lb ziti pasta
β’ 2 lbs boneless skinless chicken breasts (diced)
β’ 8 oz cream cheese (softened)
β’ 1 cup sour cream
β’ 1 packet (1 oz) ranch seasoning mix
β’ 1 cup chicken broth
β’ 1/2 cup whole milk
β’ 12 slices bacon (cooked and crumbled)
β’ 3 cups sharp cheddar cheese (shredded, divided)
β’ 1 cup mozzarella cheese (shredded)
β’ 1/2 cup parmesan cheese (grated)
β’ 2 tbsp olive oil
β’ 4 cloves garlic (minced)
β’ 1 tsp garlic powder
β’ 1 tsp onion powder
β’ 1 tsp salt
β’ 1/2 tsp black pepper
β’ 3 tbsp fresh chives (chopped)
β’ 2 tbsp fresh parsley (chopped)
Instructions:
1. Preheat the oven to 375 degrees F and grease a 9x13-inch baking dish.
2. Boil the ziti in salted water for two minutes less than the package directions, then drain.
3. Season the diced chicken with salt, pepper, garlic powder, and onion powder.
4. Heat the olive oil in a large skillet over medium-high heat and add the minced garlic.
5. Cook the seasoned chicken for 5 to 7 minutes until golden brown and cooked through.
6. Whisk the cream cheese, sour cream, ranch seasoning, chicken broth, and milk until smooth.
7. Combine the cooked ziti, chicken, and half the crumbled bacon with the ranch sauce.
8. Fold gently until every piece of pasta is coated.
9. Transfer the mixture to the prepared baking dish.
10. Top with 2 cups of cheddar, all the mozzarella, all the parmesan, and the remaining bacon.
11. Cover with foil and bake for 20 minutes.
12. Uncover and sprinkle with the remaining 1 cup of cheddar.
13. Bake uncovered for 10 more minutes until golden and bubbly.
14. Rest for 5 minutes, then garnish with chives and parsley before serving.
Undercook the pasta slightly since it finishes cooking in the oven. Store leftovers in the fridge for up to 4 days or freeze for up to 3 months. Swap turkey bacon or Greek yogurt for a lighter version, and add a splash of milk when reheating to loosen the sauce.
