Ingredients
Crust
200 g digestive biscuits
100 g melted butter
Cheesecake Filling
500 g cream cheese, room temperature
150 g sugar
2 eggs
200 ml heavy cream
1 teaspoon vanilla extract
Marble Effect
Blue food coloring
Purple food coloring
How to Prepare
1. Prepare the crust
Crush the biscuits into fine crumbs.
Mix with the melted butter until evenly combined.
Press the mixture firmly into the bottom of an 18–20 cm springform pan.
Refrigerate for 20 minutes.
2. Prepare the filling
In a large bowl, mix the cream cheese and sugar until smooth.
Add the eggs one at a time, mixing gently.
Pour in the heavy cream and vanilla extract, then mix until creamy and smooth.
3. Create the marble effect
Divide a small portion of the filling into two bowls.
Color one bowl blue and the other purple.
Pour the plain filling over the crust.
Add small spoonfuls of the colored fillings on top.
Use a skewer or knife to gently swirl and create a marbled pattern.
4. Bake
Bake in a preheated oven at 160°C (320°F) for 50–55 minutes.
The center should still slightly jiggle.
Turn off the oven and let the cheesecake cool inside with the door slightly open.
5. Chill
Let cool to room temperature, then refrigerate for at least 4 hours, preferably overnight.
