Teriyaki Chicken Rice Bowl
Sweet and savory teriyaki chicken with rice and veggies for a quick high protein dinner bowl
Ingredients:
2 chicken breasts cooked and sliced
2 cups cooked white rice
2 cups stir fry vegetables
1 tbsp olive oil or sesame oil
1/4 cup soy sauce
2 tbsp honey or brown sugar
1 tbsp minced garlic
1 tsp ginger optional
1 tsp cornstarch
2 tbsp water
Black pepper to taste
Red pepper flakes optional
Directions:
Cook rice until soft and fluffy and keep warm
Season chicken with black pepper
Heat oil in a skillet over medium high heat and cook chicken until golden and heated through
Remove chicken and set aside
In the same pan add soy sauce honey garlic and ginger and stir well
Add cornstarch mixed with water and simmer until sauce thickens and becomes glossy
Add vegetables and sauté until tender crisp and coated in sauce
Return chicken to the pan and toss until fully coated
Serve over warm rice and drizzle extra sauce on top
