Teriyaki Chicken Rice Bowl

Sweet and savory teriyaki chicken with rice and veggies for a quick high protein dinner bowl

Ingredients:

2 chicken breasts cooked and sliced
2 cups cooked white rice
2 cups stir fry vegetables
1 tbsp olive oil or sesame oil
1/4 cup soy sauce
2 tbsp honey or brown sugar
1 tbsp minced garlic
1 tsp ginger optional
1 tsp cornstarch
2 tbsp water
Black pepper to taste
Red pepper flakes optional

Directions:

Cook rice until soft and fluffy and keep warm
Season chicken with black pepper
Heat oil in a skillet over medium high heat and cook chicken until golden and heated through
Remove chicken and set aside
In the same pan add soy sauce honey garlic and ginger and stir well
Add cornstarch mixed with water and simmer until sauce thickens and becomes glossy
Add vegetables and sauté until tender crisp and coated in sauce
Return chicken to the pan and toss until fully coated
Serve over warm rice and drizzle extra sauce on top

Creamy garlic parmesan chicken with cheesy twisted pasta for a rich high protein comfort dinner

Ingredients:

2 boneless skinless chicken breasts sliced into thin strips
12 oz twisted pasta such as rotini or fusilli
2 tbsp olive oil
4 tbsp butter divided
4 cloves garlic minced
1 tsp Italian seasoning
1/2 tsp crushed red pepper flakes optional
Salt to taste
Black pepper to taste
1 cup heavy cream
1/2 cup chicken broth
1 1/2 cups grated parmesan cheese
1/2 cup cream cheese
1 cup shredded mozzarella cheese
Fresh parsley chopped

Directions:

Cook pasta in salted boiling water until al dente then drain and reserve a little pasta water
Heat olive oil in a large skillet over medium high heat
Season chicken with salt black pepper Italian seasoning and red pepper flakes
Cook chicken for 5 to 6 minutes until browned and fully cooked then remove and set aside
In the same skillet melt 2 tbsp butter over medium heat
Add garlic and sauté for 1 to 2 minutes until fragrant
Pour in chicken broth and heavy cream and stir well
Let sauce simmer for 3 to 4 minutes until slightly thickened
Add parmesan cream cheese and mozzarella and stir until melted and smooth
Add a splash of reserved pasta water if needed to loosen sauce
Return chicken and pasta to the skillet and toss until evenly coated
Let simmer for 2 to 3 minutes to blend flavors
Garnish with parsley and serve warm

2 tbsp butter for mac and cheese
2 tbsp flour
1 1/2 cups milk
1 1/2 cups shredded cheddar cheese
1/2 tsp salt for mac and cheese

Directions:

Rub chicken with olive oil garlic powder onion powder smoked paprika salt and black pepper
Heat a skillet or grill pan over medium high heat and cook chicken until browned and fully cooked
In a small pan melt butter and mix with barbecue sauce and honey
Brush glaze over cooked chicken and let it caramelize slightly
Cook macaroni in salted water until tender then drain
In a saucepan melt butter and whisk in flour
Slowly add milk while stirring until smooth
Add cheddar cheese salt and black pepper and stir until creamy

Ingredients:

1 cup uncooked brown rice
2 cups chicken broth
2 cups cooked shredded chicken
1 can 15 oz black beans drained and rinsed
1 can 15 oz corn drained
1 can 10 oz diced tomatoes with green chiles
1 cup salsa
1 tbsp taco seasoning
1 cup shredded cheddar cheese divided
1/2 cup sour cream
Salt to taste
Black pepper to taste
1/4 cup fresh cilantro chopped

Directions:

Preheat oven to 375 degrees F and grease a 9x13 inch baking dish
Cook brown rice with chicken broth according to package instructions until tender
In a large bowl mix shredded chicken black beans corn diced tomatoes taco seasoning and half of the cheese
Season mixture with salt and black pepper
Spread cooked rice evenly in the baking dish
Add chicken mixture on top and spread evenly

Directions:

In a bowl whisk soy sauce oyster sauce hoisin sauce brown sugar sesame oil cornstarch water and black pepper
Heat butter or oil in a large skillet over medium heat
Add eggs and scramble until cooked
Add chilled rice peas carrots green onions and soy sauce
Stir fry until heated through and slightly crispy then set aside

Pinch of nutmeg
1/4 cup all purpose flour
4 cups chicken broth
2 cups heavy cream
3 cups sharp cheddar cheese shredded
3 cups fresh broccoli chopped
1 can refrigerated biscuit dough cut into pieces
Dried parsley optional

Directions:
